Texas hotdog sauce

Serve over hotdogs — yum yum!

Ingredients
1 tablespoon vegetable oil
4 ounces ground beef
4 ounces ground pork
4 beef frankfurters, diced
1/4 cup diced sweet onion
1/2 clove garlic, peeled and minced
1/2 teaspoon browning sauce
1/4 teaspoon ground black pepper
3/4 teaspoon salt
1/4 (10.75 ounce) can tomato soup
2 1/2 cups water
3/4 teaspoon paprika
1/2 teaspoon chili powder
3/4 teaspoon ground cinnamon
1/2 cup fine dry bread crumbs

Directions

Heat vegetable oil in a large, deep skillet over medium high heat. Place ground beef, ground pork, frankfurters, and sweet onion in the skillet. Cook until meat is evenly brown and onion is soft. Drain and lower heat. Mix in garlic, browning sauce, ground black pepper, salt, tomato soup, water, paprika, chili powder, cinnamon and dry bread crumbs. Slowly simmer until thick, about 25 minutes.

Greek Spinach Pie

This is one pie you won’t feel guilty about eating! A sumptuous and healthy blend of spinach, garlic, and cheese — and heart-healthy oils that have made the Mediterranean diet the new “fountain of youth.”

Ingredients

3 tablespoons olive oil
1 large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 pounds spinach, rinsed and chopped
1/2 cup chopped fresh parsley
2 eggs, lightly beaten
1/2 cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
1/4 cup olive oil

What’s next

Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9×9 inch square baking pan.
Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling. Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

Here’s a light, delicious vegetable dish for those who are counting carbs in preparation for bikini season.

Ingredients
1 pound broccoli, cut into florets
1 medium yellow summer squash, halved lengthwise and cut in 1/4 inch slices
2 tablespoons olive or vegetable oil
1 garlic clove, minced
1/2 teaspoon dried oregano

What’s next
Combine the broccoli and squash in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; reduce heat. Cover and steam for 5-8 minutes or until crisp-tender. Meanwhile, combine the remaining ingredients. Remove vegetables from steamer; drizzle with oil mixture and toss to coat.

Vegan baked beans

A delicious, healthy and very cheap dish. Serve on its own or as a siding. For best results, soak the beans the night before, and then cook in a slow cooker to let all the flavors meld together.

Ingredients
1 (16 ounce) package dry navy beans
6 cups water
2 tablespoons olive oil
2 cups chopped sweet onions
1 clove garlic, minced
4 (8 ounce) cans tomato sauce
1/4 cup firmly packed brown sugar
1/4 cup molasses
2 tablespoons cider vinegar
3 bay leaves
1 teaspoon dry mustard
1/4 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon

What’s next

Place beans and water in a large pot, and bring to a boil. Reduce heat to medium, and continue cooking 1 hour, stirring occasionally, until beans are tender. Drain, and transfer to a large casserole dish. Preheat oven to 300 degrees F (150 degrees C). Heat the olive oil in a skillet over medium heat. Stir in the onions, and cook until tender. Mix in garlic, and cook until golden brown. Mix onions and garlic into casserole dish with the beans. Stir in the tomato sauce. Mix in brown sugar, molasses, vinegar, bay leaves, mustard, pepper, nutmeg, and cinnamon.
Cover and bake 3 1/2 hours in the preheated oven, stirring frequently and adding water if necessary. Remove cover, and continue baking 30 minutes.

Peanut Butter Fudge Oreo Pie

The name of the recipe says it all. The world’s best combination for a triple-loaded, uber-indulgent dessert. Don’t even think about the calories — it’s sinful, but worth it.

Ingredient
1 Keebler ready-made Oreo pie crust
1 (4oz) box instant French vanilla pudding mix
1 cup cold milk
3-4 tablespoons creamy peanut butter (or more if you like)
1 jar chocolate fudge sauce (Smuckers or Dove)
1 regular container Cool Whip (thawed)

What’s next
Have pie crust ready. Carefully spread/frost the bottom and sides of pie crust with fudge sauce (if really thick microwave for a few seconds). You won’t need to use the whole jar.
In a bowl, blend instant pudding and 1 cup milk using a whisk. Using an electric mixer, add the peanut butter (mixture will be thick). Spoon onto the fudge layered pie crust.Top with Cool Whip. Garnish with any Oreo crumbs from the pie crust. Refrigerate.

Ingredients
1/2 cup pineapple juice
1/3 cup rum
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon ginger, grated
2 cloves garlic, minced
1/2 teaspoon red pepper flakes, crushed
PREPARATION:
Combine all ingredients in a small mixing bowl. Pour marinade over steak and allow to marinade in refrigerator for 3-6 hours.

Easy, cheap meatloaf

A cheap and easy meatloaf recipe when you’re low on ingredients.

Ingredients2 eggs
1/2 cup tomato juice or V8
1/4 cup ketchup
1 Tbs Worcestershire sauce
1/2 tsp each salt and pepper
1 cup bread crumbs
1/2 cup quick cooking oatmeal
6 cloves garlic, minced
1/2 cup fresh parsley or 1/4 cup dried
1 carrot, minced
2 ribs celery, minced
1/2 green pepper, minced
1 onion, minced
1 pound ground beef

Next steps:
Preheat oven to 350 degrees. Mix together the eggs, tomato juice, ketchup, Worcestershire sauce, salt, and pepper. Stir in the bread crumbs and oatmeal.

You can chop the vegetables by hand or in a food processor. Then mix them into the mixing bowl and stir well. Finally, add the meat and mix together with your hands. (If you’d rather use a mixer, just be sure not to overmix.)

Spray a loaf pan with cooking spray and spread the meat in it.

Top with your choice of toppings, like 2 Tbs brown sugar and 2 Tbs mustard, or 1/4 cup ketchup and 1 Tbs red wine vinegar.
