Steak Salad

A quick, easy and healthy treat, this is easy to adjust to suit your tastes and style.

You will need:

  • 350g Steak
  • 2 plum tomatoes, cut into various sizes
  • 550g of julienne-style romaine lettuce
  • 3tbsp crumbled cheese
  • 40g finely sliced onion – can be red or white
  • 1 small clove garlic, crushed
  • Salt and pepper to taste
  • 4tbsp Extra Virgin Olive Oil

1. Heat a small amount of butter in a griddle pan until smoking

2. Place the Steak into the pan – cook for around 1minute per side, whilst seasoning the upwards side with the sale and pepper

3. Whilst the steak rests (for between three and five minutes) Mix the onion, tomatoes and garlic in a large bowl

4.  Slice the Steak into narrow strips – no wider than 1cm

5. Add the sliced Steak, lettuce and oil to the bowl, then toss so all is covered well. Crumble the cheese on top before service.

To make this dish a bit different, it’s worth experimenting with lots of the ingredients – the time spent cooking the meat, what type of meat you use (Beef, Pork, Lamb or Chicken), and the cut of meat, the type of cheese, and if you use an oil or vinaigrette.

The Great Salmon Caper Recipe

Chef Recipe.gifNow we know the truth behind those peppercorn look-alikes, capers.  Let’s get cracking on the cooking.  Sink your teeth into this delicious salmon recipe, sure to please even the picky eaters.

Ingredients:

  • 2 salmon fillets
  • 1 tablespoon capers
  • 1 teaspoon basil
  • I teaspoon oregano
  • 1 teaspoon parsley
  • 1 bunch chives, chopped
  • 1 tablespoon extra virgin olive oil
  • S & P, to taste
  • 1 tablespoon lemon juice
     

What’s Next:

Go ahead and preheat your oven to 350 F, or 175 C.

In a large bowl- add capers, basil, oregano, parsley & chives.  Set aside.

In a small bowl- whisk together olive oil, S & P & lemon juice.

Drizzle olive oil mixture over capers & herbs.  Toss until evenly coated with oil mix.

Cover salmon fillets with herb oil mixture & cook for 20 minutes, or until salmon flakes off with a fork.

Cooking for Your Canine: Nutty Buddy Dog Food Recipe

Ingredients:

  • 1 pound shell pasta, cooked
  • 16 ounces spaghetti sauce
  • 2, 12 ounce cans chickpeas
  • 6 eggs
  • 16 ounce bag peas and carrots, thawed
  • 8 ounces cheese, cut into cubes

What’s Next:

Cook the pasta and let it cool.

Mix all the ingredients in a large bowl. Divide the mixture and put 2-cup portions into zip-lock bags. One zip-lock bag is a meal for a very large dog. It freezes well.

Southern Fruit Tea Recipe

Fruit Tea.jpgNow you can’t have a complete summer without the right drinks.  I love tea of any kind and this Southern Fruit Tea recipe just says summer with every taste.

Ingredients:

  • Tea bags for 2 gallons tea
  • 1 1/2 quarts boiling water
  • 2 cups granulated sugar
  • 2 peaches, pureed
  • 48 ounce can pineapple juice
  • 12 ounce can frozen orange juice
  • 12 ounce can frozen lemonade

What’s Next:

Place tea bags in bowl or pitcher. Pour boiling water over tea bags. Add sugar, stirring to dissolve. Let tea bags steep in sugar water several hours or overnight. discard tea bags. Pour tea into a large bowl. Add juices & peaches, stirring well. Pour equal amounts into two one-gallon jugs. Add water to each to fill jug. Refrigerate. Shake well before serving.

You can spice up the tea with a hint of almond flavoring that is sure to make your taste buds tingle.

Camping Dutch Oven Blackberry Cobbler Recipe

Blackberry Cobbler Ducth Oven Recipe Camping.jpgNow that I’ve blown the dust off my trusty camping tent, I’m ready to start packing for a weekend of outdoors life.  This tried & true Dutch Oven Blackberry Cobbler recipe will make you the hero around the campfire.  Enjoy this delight of a camping dessert!

Ingredients:

  • 2 cups Bisquick
  • 1 1/3 cups milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • Cinnamon, to taste
  •  2 x 29 ounce cans blackberry filling

What’s Next:

Line a 12-quart Dutch oven with heavy duty aluminum foil for easy clean-up. Place on bed of coals to preheat for 10-15 minutes. Mix all ingredients except for blackberries. Remove Dutch oven off of coals and pour in fruit, drain if needed.

Pour batter over top of fruit. Add cinnamon on top, if desired. Put lid on Dutch oven and place back on coals. When using charcoal, place about 8 pieces on bottom and 13-15 on top. Bake for about 45 minutes or until golden brown on top. Remove from coals and crack lid to allow it to cool.  Now go be the camping hero!
