I recently wrote about heartburn and the kinds of food that can help avoid attacks. Here is one interesting recipe by Sharon Gillson from About.com. Dubbed Baked Chicken Parmesan, this recipe is a less spicy and leaner version of the conventional dish.
Prep Time: 15 minutes
Cook Time: 45 minutes
â€¢ 4 boneless, skinless chicken breasts
â€¢ 1/2 cup bread crumbs
â€¢ 3 tablespoons Parmesan cheese
â€¢ A dash of Italian dressing
â€¢ A dash of salt
â€¢ 4 teaspoons olive oil
â€¢ Preheat oven to 375 F.
â€¢ Spray a baking dish with vegetable cooking spray.
â€¢ In a small bowl, combine seasoned bread crumbs, Parmesan cheese, Italian seasoning, and salt. Mix well.
â€¢ Lay chicken on a plate and coat with olive oil.
â€¢ Coat chicken on both sides with bread crumb mixture.
â€¢ Sprinkle remaining crumbs over chicken.
â€¢ Bake uncovered for 35 to 45 minutes, or until done.
Take careful note of the kind of chicken that you get. Chicken breast is always leaner than other cuts but do make sure that you get the meat that does not have skin OR remove the skin yourself. Donâ€™t be tempted to keep the skin in there and eat it later on. I know how good it is but it just might trigger a heartburn attack if youâ€™re not careful. As for the olive oil, you can actually use any of the variations, but I prefer the extra virgin oil for its very light flavor.
