Beet Salad with Citrus Honey Dressing

Beets are very nutritious, they are a good source of antioxidants and they have anti-inflammatory qualities as well. Eating beets reduce the risk of heart disease and cancer. It is also a good source of iron and folic acid. Aside from these nutritional qualities, it is also said that beets are considered as aphrodisiacs, just like arugula. Here is a recipe you can prepare in time for Valentines.

Ingredients:

6 oranges

1/4 cup honey

6 red baby beets, peeled

6 yellow baby beets, peeled

1/2 pound arugula leaves

1/4 cup walnuts

4 cups of water

Salt

In a pot or Dutch oven, boil the beets for around 10 minutes or until they are tender. Drain and discard the liquid. Slice the beets as you wish and set aside.

Zest the oranges and place the zest on a plate. Peel half of the oranges and slice them, divide the rest into segments.

In a deep saucepan under medium low heat, combine the water, honey and segmented oranges. Bring it to a boil. After, crush the boiled oranges inside the pot. Strain the liquid and discard the seeds and pulp of the oranges. Let the liquid simmer for another 10 minutes or until it thickens. Stir in the orange zest.

On a plate, place some arugula leaves, beets, sliced oranges and walnuts. Drizzle the vegetables with the orange honey water. Serve immediately.
