Preparing your own yogurt gives you access to this superfood in a cost efficient way. Yogurt has a lot of health benefits. It promotes good digestion and boosts your immune system. It can also prevent osteoporosis because it is a good source of calcium. These are just a few reasons why it is good for ones diet.
Yogurt can be eaten in many ways. Take your pick- have it for breakfast or as a snack, use it as a marinade, create sauces and dressings or make smoothies with it. You can even use it as a beauty product for the face and hair just like what they did in the old days.
1 quart (32 ounces) of full fat sheep or cow’s milk (pasteurized)
2 tablespoons of plain unflavored yogurt with active live cultures
2 tablespoons of powdered full cream milk
In a pot, heat the milk up to 185 degrees Fahrenheit or just before boiling point. Stir it occasionally, so that the milk at the bottom does not burn.
Transfer the milk to a non-metal container and let it cool until lukewarm (100-105F). You will notice that a skin will form on top. The cooling process can take a while. If you want to speed it up, you can fill the sink with water and submerge the pot. Stir the milk until it cools.
In a small bowl, combine the 2 tablespoons of yogurt with the 2 tablespoons of milk. Add this to the milk and mix well.
Cover the pot and wrap it with a towel. Store it in a warm, dry place for 8-12 hours or until it thickens.
Drain the excess liquid and transfer to desired container. Make sure the container/s can be sealed well. If you are planning to use jars, sterilize them before using.
Refrigerate for 8-12 hours before serving. Use within 4-5 days.
