I’m Back with an Apple & Cheese Cake Recipe
Well folks, I’m back. A day late & a dollar short, but ready to dish out the best recipes & kitchen gadgets around. Italy was wonderful & I will sorely miss the unforgettable coffee, but it’s great to be back with you. I hope your holidays were tasty & your New Year’s delicious.
To start off the day right, let’s take a look at this Good Housekeeping recipe. This Apple & Cheese Cake recipe is sure to win over any palates this year. Especially good with a light coffee, this cake is on my top ten list for 2007. Enjoy!
Ingredients:
- 3 cups chopped dessert apples
- 1/2 cup walnuts, chopped
- 1/3 cup sunflower oil
- 1 1/3 cups self-raising flour
- 1 tsp baking powder
- 1/3 cup + 1 Tbsp light muscovado sugar
- 2/3 cup raisins
- 2 eggs
- 1/2 cup Cheddar cheese, grated
- Icing sugar for dusting
What’s Next:
Grease a 9-inch (23 cm) deep tart pan. Go ahead & preheat your oven to 350 F or 175 C.
Combine the flour and baking powder in a bowl.
Stir in sugar, raisins, nuts & apples.
Beat eggs and oil in another bowl.
Stir in the egg mixture to the flour mixture.
Put half of batter in the tart pan.
Sprinkle cheese on top.
Spoon the rest of the batter on top of the cheese.
Bake for 50 minutes, or until firm in the center.
Cool completely then sprinkle with icing sugar.
