fudge-pie-recipe-11-15-2006.jpgLet’s celebrate the Joy of Cooking cookbook’s 75th birthday in style, chocolate style.  This Fudge Pie recipe is a blast from the Joy of Cooking past.  The crustless pie is a sure treat for anyone who shines their spotlight on chocolate.  Enjoy & Happy Birthday, Joy!

Here’s What to Do:

Go ahead & preheat your oven to 325 F or 162 C.

Cream together:

  • 1 cup sugar
  • 1/2 cup butter

Beat in:

  • 2 egg yolks
  • 2 ounces melted, slightly cooled unsweetened chocolate

Add and beat:

  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Whip until stiff, but not dry:

  • 2 egg whites
  • 1/8 teaspoon salt

Fold egg whites & salt mix into batter. Pour into a greased 8-inch pie pan and bake about 30 minutes & enjoy!  A great treat to serve with vanilla bean ice cream!

Eat well & Laugh often!
