“I’m not sure what culinary mischief you were getting yourself into last night,” – You’re not sure? How do you have any idea at all? Why do you say you’re not sure when you really mean you don’t know? It makes you sound pretty stupid.

“Mario gifted the judges with cranberry Bellini’s” – no apostrophe. It’s a simple plural, no possessive.

“Ray’s food compared with de Laurentiis’.” – Both names end in “‘s”. The “s” on the end of “Laurentiis” is part of the nam itself, NOT a pluralization, so it’s still “‘s”, not “‘”.

If you’re going to publish your writing (even online), you really should hire an editor, at least until you learn to write properly yourself.
