Mexican Apple Enchilada For You
To keep up with our Mexican Monday theme, I thought we’d mosey on down to the wonderful land of dessert. This Mexican Apple Enchilada is a delicious way to end a Monday, sweet and slow.

What’s Next:
Go ahead and preheat your oven to 350 F, or 175 C.
Spoon apple filling evenly onto tortillas, sprinkle with cinnamon. Roll up and place sea,-down onto a lightly greased baking sheet.
In a medium saucepan- bring butter, sugars & water to a boil, stirring constantly. Reduce heat & simmer, stirring continuously for 3 minutes.
Pour sauce over rolled tortillas, sprinkle with a little extra cinnamon. Bake for 20 minutes.
Allow to cool for a couple of minutes, you are now ready to serve it up with a little vanilla bean and enjoy the rest of the evening! Good work.
