Mexican Apple Enchilada For You

Apple Enchilada.jpgTo keep up with our Mexican Monday theme, I thought we’d mosey on down to the wonderful land of dessert.  This Mexican Apple Enchilada is a delicious way to end a Monday, sweet and slow.

Ingredients:

  • 21 oz can apple pie filling
  • 6, 8-inch flour tortillas
  • 1 teaspoon cinnamon
  • 1/3 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup water
  • Vanilla bean ice cream for added yum
  • What’s Next:

    Go ahead and preheat your oven to 350 F, or 175 C.

    Spoon apple filling evenly onto tortillas, sprinkle with cinnamon.  Roll up and place sea,-down onto a lightly greased baking sheet.

    In a medium saucepan- bring butter, sugars & water to a boil, stirring constantly.  Reduce heat & simmer, stirring continuously for 3 minutes.

    Pour sauce over rolled tortillas, sprinkle with a little extra cinnamon.  Bake for 20 minutes.

    Allow to cool for a couple of minutes, you are now ready to serve it up with a little vanilla bean and enjoy the rest of the evening!  Good work.
