Let’s show those folks at the Journal of the American Dietetic Association that we canÂ roll with the fruit as long as they can keep dishing it out!Â I know that this may not be the best season for this Mint Fruit Salad recipe, but I bet you can still find the ingredients out there in the stores.Â I’m in the mood to get away from all the winter soups & have a taste of summer, enjoy!
- 1 medium cantaloupe, cut into bite-sized chunks
- 3 kiwi, sliced
- 1/2 pint strawberries, sliced
- 2 Tbsp. mint leaves cut into thin strips
- 1/4 cup orange juice
- 2 Tbsp. honeyÂ
In large serving bowl, combine cantaloupe, strawberries, kiwi, and mint.Â
In small bowl, blend orange juice and honey; pour over fruit and lightly toss.
Cover and chill.
