Mint Fruit Salad Recipe
Let’s show those folks at the Journal of the American Dietetic Association that we can roll with the fruit as long as they can keep dishing it out! I know that this may not be the best season for this Mint Fruit Salad recipe, but I bet you can still find the ingredients out there in the stores. I’m in the mood to get away from all the winter soups & have a taste of summer, enjoy!
Ingredients:
- 1 medium cantaloupe, cut into bite-sized chunks
- 3 kiwi, sliced
- 1/2 pint strawberries, sliced
- 2 Tbsp. mint leaves cut into thin strips
- 1/4 cup orange juice
- 2 Tbsp. honey
What’s Next:
In large serving bowl, combine cantaloupe, strawberries, kiwi, and mint.
In small bowl, blend orange juice and honey; pour over fruit and lightly toss.
Cover and chill.
