Best Brunch Potato Casserole Recipe
Ingredients:
- 4 pounds new potatoes, cut into 1-inch cubes
- 1 pound cheddar cheese, shredded
- 2 cups mayo
- 1 onion, chopped
- 1 pound bacon, cooked crisp and chopped
What’s Next:
Go ahead & preheat your oven to 350 F, or 175 C.
In a large saucepan- bring potatoes to boil. Cook just until potatoes are soft. Drain & place in a large bowl.
In same bowl- gently stir in cheese until melted without mashing potatoes.
In a separate bowl- stir together mayo, onion & bacon. Gently stir into potatoes and cheese. Spread into a 13×9-inch baking dish & bake for 50 minutes.
