Best Brunch Potato Casserole Recipe
- 4 pounds new potatoes,Â cut into 1-inch cubes Â
- 1Â pound cheddarÂ cheese, shreddedÂ
- 2 cups mayo
- 1 onion, chopped
- 1 pound bacon, cooked crisp and chopped
Go ahead & preheat your oven to 350 F, or 175 C.
In a large saucepan- bring potatoes to boil.Â Cook just until potatoes are soft. Drain & place in a large bowl.
In same bowl-Â gently stir in cheese until meltedÂ without mashing potatoes.
In a separate bowl- stir togetherÂ mayo, onion &Â bacon. Gently stir into potatoes and cheese. Spread into a 13×9-inch baking dish & bake for 50 minutes.
