Mothers Day.gifMoving right along with our Mother’s Day brunch menu, we’re ready for the Best Brunch Potato Casserole & Fresh Strawberry Fruit Fluff recipe.  And away we go…

Best Brunch Potato Casserole Recipe

Ingredients:

  • 4 pounds new potatoes, cut into 1-inch cubes  
  • 1 pound cheddar cheese, shredded 
  • 2 cups mayo
  • 1 onion, chopped
  • 1 pound bacon, cooked crisp and chopped

What’s Next:

Go ahead & preheat your oven to 350 F, or 175 C.
In a large saucepan- bring potatoes to boil. Cook just until potatoes are soft. Drain & place in a large bowl.

In same bowl- gently stir in cheese until melted without mashing potatoes.

In a separate bowl- stir together mayo, onion & bacon. Gently stir into potatoes and cheese. Spread into a 13×9-inch baking dish & bake for 50 minutes.

 

Now you just need to review the Fresh Strawberry Fruit Fluff recipe & you’re on your way to a wonderful Mother’s Day brunch.
