We know the history, let’s eat the food! Enjoy this easy & traditional gazpacho recipe.
Ingredients:
- 6 large tomatoes
- 1 large cucumber, peeled, seeded & chopped
- 1 large green bell pepper, chopped
- 2 onions, chopped
- 2 cloves garlic
- 3 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley
- 1 teaspoon cumin
- S & P, to taste
What’s Next:
In a medium saucepan- boil water & add tomatoes. Boil for 15 seconds. Remove & transfer to a colander & rise under cool water, the skins should slip off easily.
Place tomatoes into food processor, along with the rest of the above ingredients.
Blend on high for several seconds, until well-mixed & blended.
Chill in frig for several hours, you want the flavors to meld. Serve chilled. Enjoy.

In no region is that considered TRADITIONAL GAZPACHO….traditional is puree and even chunky styles are still not like the salad thats pictured….looks like great summer soup! what should we call it?
How much water do you boil??
You dont cook or boil anything when making gazpacho, its just tomatoes, green pepper, olive oil, sherry vinegar, salt and a clove of garlic, some people put onion, all in a blender and that is it, there is no cooking involved whatsoever, and no parsley, your recipe looks more like a mexican picadillo than gazpacho. Sorry, Im from Spain and when I see places like wholefoods make gazpacho like this it irritates me, call it whatever, It might even be a good recipe but it is not gazpacho
