- 1 can kidney beans, drained
- 1 cup fresh baby spinach
- 1 cup 10% cream
- 3 cups chicken stock
- 1 onion, diced
- 1 carrot, diced
- 1 teaspoon thyme, chopped & fresh
- 2 tablespoons EVOO
- S & P, to taste
Â What’s Next:Â
In a medium saucepan, heat the olive oil and saute the carrot and onion. Add the chicken stock and the beans and bring to a boil.
Add the cream, baby spinach and thyme, season to taste and serve.Â And that’s all folks!
