Thyme Baked Fish

Thyme baked fish a delectable entrée which is great with salads. Serve it with white wine to give the meal a classy vibe. Use any type of fish you desire. Opt for smaller or medium sized ones, because they tend to have softer meat.

 

Serves 5

Ingredients:

1 medium sized fish, scaled and cleaned

6 sprigs fresh thyme or 2 teaspoons dried thyme

1 lemon, sliced

1/2 cup butter

Sea salt and freshly ground black pepper to taste

Lemon wedges for serving

 

Preheat the oven at 350F and lightly grease a roasting pan or baking tray with oil or butter. Next, season the fish inside out with sea salt and black pepper. After, stuff the fish with 3/4 of the thyme, lemon slices and half of the butter. After, place it on the roasting pan and top it with the remaining butter and thyme sprigs. Bake the fish in the oven for 45 minutes or until it is done. Remove from the oven and transfer it to a serving platter. Pour the pan juices over the fish and serve with lemon wedges.

Sake Baked Fish

Sake baked fish is a light and delicious fish recipe that is easy to prepare. All you have to do is combine the ingredients, place them in foil packets and bake them for a few minutes. I like how the vegetables add subtle flavors to the fish, while the marinade gives it some bite.

 

Serves 4

Ingredients:

2 tablespoons sake

1 teaspoon soy sauce

1 teaspoon fresh ginger juice

1 teaspoon salt

650g white fish fillets (dory, flounder, sea bass, cod) cut in 4 equal pieces

4 pieces aluminum foil, cut into squares

1 large carrot peeled and thinly sliced

1 medium onion, peeled and thinly sliced

1 medium bell pepper, seeds removed and sliced

1 stalk leek, thinly sliced

1 tablespoon oil

1 lemon sliced

 

Preheat the oven at 160C and lightly grease the aluminum foil with oil.

Put the fish in a shallow baking dish. After, combine the sake, ginger juice, soy sauce and salt in a small bowl. Stir until the salt is dissolved. Pour the mixture over the fish and allow it to marinate for 10 minutes. Drain the marinade and reserve it.

Take some carrots, leeks, onions and bell peppers and place them at the center of the foil. Top it with a fish fillet and pour some reserved marinade over it. Bring the ends of the foil together and fold the edges to enclose the fish. Do this for the remaining ingredients.

Transfer the foil packets on a baking sheet and bake them for 15-20 minutes or until the fish easily flakes. You may serve the fish fillets in the foil packets or you may carefully remove them. Discard excess juices if desired. Garnish with lemon slices and serve with vegetables or rice.

Fish Pie

Fish pies are light hearty dishes that are nutritious and delicious too. It is actually a meal in itself because a slice can be quite filling. This dish also goes well with fruit and vegetable salad.

 

Serves 6

Ingredients:

1.25kg potatoes, peeled and cut into chunks

1/4 teaspoon ground nutmeg

1/3 cup olive oil

1 brown onion, finely chopped

1 large carrot, peeled and diced

4 stalks celery, trimmed and diced

1 1/2 tablespoons corn flour

1/2 cup reduced-fat milk

375ml can evaporated milk

3/4 cup grated light tasty cheese

1/4 cup grated parmesan cheese

1 tablespoon English mustard

1 lemon, juiced

1/4 cup flat-leaf parsley leaves, chopped

500g salmon fillets, bones removed, cut into 3cm cubes

200g smoked cod fillets, trimmed, cut into 3cm cubes

8 cooked small king prawns, peeled, deveined, halved

4 eggs, hard-boiled, peeled, quartered

75g baby spinach

Pour cold water in a saucepan. Add the potatoes and makes sure they are submerged in cold water. Place it over high heat and bring it to a boil. Reduce the heat to low and let it simmer for 15-20 minutes or until it becomes tender. Drain. Place it in the saucepan and add 2 tablespoons of oil and nutmeg. Season it with salt and pepper. Mash it using a fork or potato masher until it becomes smooth. Cover and keep warm.

Heat another 2 tablespoons of oil in a heavy saucepan over medium heat. Sauté the onions in the pan for 2-3 minutes, until they are translucent. Add the celery and the carrots. Cook for 6-8 minutes, until they are tender.

Preheat the oven at 200C and lightly grease an 8” round baking dish. After, put the corn flour in a bowl and slowly add milk. Whisk it until there are no more lumps. Combine the milk and flour mixture and evaporated milk in a saucepan over high heat. Bring it to a boil, while stirring. Remove from heat and add the parmesan cheese, mustard, lemon juice and parsley. Stir.

Place the salmon fillets at the bottom of the baking dish. Make a second layer by adding the cod fillets. After, place the prawns. Top it with celery and carrots. Then add the egg and then the spinach. Pour the sauce into the baking dish and gently shake the dish to allow the sauce to cover the other ingredients and seep into the bottom of the dish. Add the mashed potato and smoothen it. Place the dish into the oven and bake it for 25-30 minutes or until it is lightly browned. Let it stand for 5 minutes before serving. Serve warm.

Baked Dory with Creamed Spinach

It is tasty dish that melts in your mouth. Be careful not to overcook the fish. We want it to be soft and fluffy, not dry. This dish is best eaten with salad or pasta.

I prefer dory fillet because the taste and texture is perfect for me. If you like other types of fish like halibut or tilapia, you can use these as well.

Ingredients:

1 lb Dory fillet

3 packages chopped frozen spinach or canned spinach

1 package (3 oz.) cream cheese

1 container (8 oz.) sour cream

1/2 cup vegetable broth

2 tablespoons lemon juice

1/2 cup grated cheese

Pepper and garlic salt to taste

Preheat oven at 350F.

If you are using frozen spinach, cook it until soft; drain.

In a medium saucepan over medium heat, combine vegetable broth, sour cream and cheese. Mix well until the ingredients blend together. Season it with garlic salt and pepper. Add the spinach. Cook for 3 minutes then set aside.

Wash the fish and dry the excess water using paper towels. Season it with lemon juice, garlic salt and pepper. Place the fillets in a greased baking pan. Top it with the spinach mixture. Sprinkle with cheese. Bake it in the oven for 20-30 minutes or until the cheese melts and turns light brown. Let it cool for 5 minutes.

Garnish with chopped parsley and lemon rind if desired. Serve warm.
