Chocolate banana pancakes are perfect for kids and those who are kids at heart. It is a sweet and healthy breakfast that will definitely put a good start to your day.
If you have kids, encourage them to prepare this recipe with you. I am sure they will have a great time. Feel free to add fresh berries or orange segments. These will go well with the banana, giving you a fruitier dish. You can also add some orange juice or zest to the toffee sauce for a more interesting flavor.
Some kids like thin pancakes, almost crepe like so that they can be rolled and eaten that way. I personally like fluffy pancakes which are more tedious to prepare. As I always say, prepare this dish according to your taste. Thin or thick, these pancakes are very delicious. Enjoy!
100g plain flour
1/4 teaspoon salt
1 tablespoon cocoa powder
1 tablespoon caster sugar
2 eggs, lightly beaten
4 tablespoons water
2 tablespoons melted butter
2 large bananas
For the toffee sauce:
50g light brown sugar
50ml heavy cream
30ml corn syrup
Sift the sugar, salt, cocoa powder and flour into a large bowl. Make a well at the center and then gradually add half of the milk and eggs while mixing. Whisk the ingredients until smooth. Fold in the rest of the milk and half of the water.
Peel 2 bananas and mash them. Add them to the pancake batter. Stir in butter and mix well. Refrigerate the batter for 30 minutes.
After, heat a frying pan or skillet over medium heat. Lightly brush it with melted butter. Ladle some batter into the frying pan. Cook it for 2-3 minutes on each side. Wait for bubbles to form and until the underside is set before you flip over the pancake. Repeat this for the remaining batter. Place the pancakes on a plate and set aside.
Next, make the toffee sauce by combining the butter, cream, sugar and corn syrup in a small saucepan over medium heat. Mix well and bring it to a boil. Remove from heat and let it cool.
Peel and slice the remaining bananas. Put the pancakes on individual plates and place some sliced bananas. Top it with toffee syrup and serve.
