Greek-style Barbecued Chicken

Greek-style barbecued chicken is a flavorful and aromatic dish that can be served during parties or when you have guests. It is best eaten with salad and polenta.

I find it easier to grill the chicken whole, but you may chop it up before marinating it if desired. You may also baste the chicken with the marinade while grilling it.

 

Serves 8

Ingredients:

2 whole fresh chickens

2 small red onions, grated

2 bunches fresh oregano, leaves picked and chopped

2 tablespoons finely grated lemon rind

8 garlic cloves, crushed

2 long fresh green chili, seeded and finely chopped

1/3 cup olive oil

Salt and freshly ground pepper to taste

Fresh oregano sprigs for serving

 

Rinse the chicken under cold running water. Pat it dry with a paper towel. Place it breast side down on a clean work surface or chopping board. With a sharp pair of kitchen scissors, cut along the sides of the backbone and remove it. Discard. Turn the chicken upside down and flatten it. Put it in a shallow dish. Repeat this with the other piece of chicken. Season it with salt and pepper.

Place the chopped oregano, onions, lemon rind, chili, garlic and olive oil in a small bowl. Mix well. Spread it over the chickens. Make sure you brush the insides as well. Let the chicken marinate for at least 10 minutes or up to overnight.

Preheat a barbecue plate or grill. Lightly grease it with oil. Barbecue the chicken skin-side down for 10 minutes or until it is browned and a bit charred. Flip it over and cook it for another 15 minutes or until it is done.

Cut the chicken into pieces using the kitchen scissors. Transfer it to a serving platter and top with oregano sprigs before serving.

Grilled Chicken and Mushroom Pizza

It is raining cats and dogs once again and it is best to stay indoors, which is why pizza is the perfect food to prepare for lazy days on the couch while watching television. It is also a great party food or side. Even kids have fun assembling pizzas, although I am not sure that this flavor will appeal to them. It is always enjoyable to make it in different shapes and sizes, depending on the occasion. One thing is for sure though, I like the crust thin.

Grilled chicken and mushroom pizza has a barbecue sauce base to give this dish an aromatic flavor. I personally prefer hickory barbecue sauce because of its smoky flavor, but any type will do. You also have the option to buy prepared pizza crusts, but I am also recommending a homemade recipe. Adding some bell peppers to this recipe can also contribute more taste, while serving it with lettuce can give it some crunchiness and color too.

 

Ingredients:

1 basic pizza dough

1/4 cup tomato sauce

4 cloves garlic, minced

1 tablespoon olive oil

1/4 cup barbecue sauce

2 pieces chicken fillet

1 large tomato, seeded and sliced

1 1/2 cups fresh button mushrooms, coarsely chopped

1 cup grated mozzarella cheese

 

Marinate the chicken in half of the barbecue sauce and preheat the oven at 250°C.soft and light brown.

Cook the chicken in a stove top grill for 3-4 minutes per side or until light brown. Once the chicken fillets are cooked, transfer it to a plate and let it cool. After, shred the grilled chicken or slice it into cubes.

While grilling the chicken, heat the oil in a small saucepan over medium heat. Sauté the garlic for 1-2 minutes or until it becomes golden brown.

Place the pizza dough on a floured surface and roll it out. Put it on a greased baking tray. Spread the tomato sauce mixture over the dough. Top it with chicken, tomatoes, mushroom and cheese. Bake it for 15-20 minutes or until crisp and the cheese bubbles.

Remove the pizza from the oven and drizzle with the remaining barbecue sauce. slice before serving. Serve immediately.

Singapore Style Noodles

Singapore style noodles are made with vermicelli. There are different variations that may have seafood and or vegetables. Here is an interesting recipe with an east meets west fusion that you will love.  The crispy bacon rashers and barbecued chicken definitely makes this noodle dish mouthwatering.

 

Serves 4

Ingredients:

450g vermicelli

2 tablespoons peanut oil

1 tablespoon sesame oil

1 small brown onion, sliced finely

4 strips of bacon, chopped finely

3 cm piece fresh ginger, grated

1 tablespoon mild curry powder

3 cups shredded barbecued chicken

6 green onions, sliced finely

1 1/2 tablespoons light soy sauce

 

Soak the noodles in boiling water. Separate them with a fork and then drain. Heat the peanut oil in a large skillet over medium heat. Fry the onions, ginger and bacon for 2-3 minutes until the onions are translucent and the bacon is crisp. Add sesame oil and curry powder and cook it for another 1-2 minutes until fragrant. Stir-in the noodles and shredded chicken. Fry  for another 2-3 minutes until heated through. Serve warm.
