Bitter Melon Scrambled Eggs

Bitter melons or bitter gourds are an acquired taste. Some love it and some don’t.It is often soaked in water and salt or rubbed with salt to remove the bitterness. In Asian cuisine, they are often used in stews and salads. It is high in nutrition and it has a quite a few medicinal uses.

 

Ingredients:

1 bitter melon

1 small onion, chopped

1/4 lb. pork loin, cut into small cubes

1 tomato, seeded and sliced

1 glove of garlic, chopped

salt and pepper to taste

1teaspoon of vegetable oil

3 eggs , beaten

 

Slice the bitter melon in half lengthwise. Scoop out the seeds and cut it into thin pieces. Soak the bitter melon in a bowl with water and 1 tablespoon of salt for at least 20 minutes or longer. Drain the water and squeeze of the excess using your hands or a cheese cloth.

In a skillet over medium flame, heat the oil. Fry the pork loin for 5-8 minutes or until they are brown and crispy. Transfer to a plate and drain the excess oil with paper towels.

In the same skillet, add the onions and tomatoes. Cook it for 3-5 minutes or until they are soft. After add the garlic and sauté it for another 3 minutes or until it is light brown.  Pour in the eggs and scramble them. Add the pork. Cook until the egg sets. Season it with salt and pepper. Serve warm with rice.
