Everyone appreciates waffles for breakfast. They are filling meals that give you ample nutrition and energy for the day ahead. Unfortunately, more often than not waffles are quite sweet. This is why I looked for a healthier alternative that tastes as good.
Whole grain waffles are nutritious and high in fiber. It is advisable to veer away from syrup or butter if you are trying to eat healthy. Instead, enjoy it with yogurt and fruit.
Serves 6/ 12 Waffles
Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
3 tablespoons ground flaxseed
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs, separate the yolks from the egg whites
2 cups fat-free milk
3 tablespoons canola oil
3 tablespoons unsweetened applesauce
Mixed fresh berries
Confectioners’ sugar
Combine the all-purpose flour, wheat flour, flaxseed, baking powder and salt in a large bowl. Mix well.
Place the eggs yolks, milk, canola and applesauce; stir.
Gradually pour the egg mixture and into the flour mixture. Mix well.
In a separate bowl, beat the egg whites until they form stiff peaks. Fold the egg whites into the prepared batter.
Pour the batter into a waffle iron or waffle maker. Cook it for 5-8 minutes until it becomes golden brown. Transfer the waffle to a serving platter or individual plates. Top the waffles with fresh berries and sprinkle them with confectioners’ sugar. Serve immediately.
