Whole Grain Waffles

Everyone appreciates waffles for breakfast. They are filling meals that give you ample nutrition and energy for the day ahead. Unfortunately, more often than not waffles are quite sweet. This is why I looked for a healthier alternative that tastes as good.

Whole grain waffles are nutritious and high in fiber. It is advisable to veer away from syrup or butter if you are trying to eat healthy. Instead, enjoy it with yogurt and fruit.

 

Serves 6/ 12 Waffles

Ingredients:

1 cup all-purpose flour

1 cup whole wheat flour

3 tablespoons ground flaxseed

3 teaspoons baking powder

1/2 teaspoon salt

2 eggs, separate the yolks from the egg whites

2 cups fat-free milk

3 tablespoons canola oil

3 tablespoons unsweetened applesauce

Mixed fresh berries

Confectioners’ sugar

 

Combine the all-purpose flour, wheat flour, flaxseed, baking powder and salt in a large bowl. Mix well.

Place the eggs yolks, milk, canola and applesauce; stir.

Gradually pour the egg mixture and into the flour mixture. Mix well.

In a separate bowl, beat the egg whites until they form stiff peaks.  Fold the egg whites into the prepared batter.

Pour the batter into a waffle iron or waffle maker. Cook it for 5-8 minutes until it becomes golden brown. Transfer the waffle to a serving platter or individual plates. Top the waffles with fresh berries and sprinkle them with confectioners’ sugar. Serve immediately.

Beef Tapa

This is a famous Filipino dish often served for breakfast. it is served with rice, sunny side up and pickled green papaya. Tapsilog as they call it means tapa, sinangag (fried rice) and itlog (egg).

It is quite easy to make as you just marinate the beef and fry it. I suggest that you be generous with the garlic and overnight marinating is best. The longer you marinate it, the tastier it gets.

This recipe can also be served for appetizer if you wish.

Ingredients:

1 kilo beef sirloin, sliced thinly

1 garlic bulb, minced or crushed

1 cup soy sauce

1 1/2 cup vinegar

1/2 cup oil

Pepper to taste

In a bowl, combine the soy sauce, vinegar, garlic and pepper. You can place the beef in the bowl to marinate it. Keep it covered and refrigerate for 2 hours up to overnight. Another option is to place the beef and marinade in a resealable bag and then refrigerate it. Turn the bag at least once.

In a skillet, heat 2 tablespoons of oil under medium heat. Fry the beef for 5-8 minutes or until it is cooked. Repeat the process for the remaining beef.

Serve immediately with rice and green papaya. Garnish it with fried garlic chips if desired.

Valentine’s Day Breakfast Ideas

Surprise your loved ones this Valentine’s Day by preparing breakfast. It is also a good idea to decorate the table with flowers to set the mood. Breakfast in bed is also a wonderful idea. Don’t forget to prepare juice and coffee or tea as well. Here are some recipes you can choose from.

You can never go wrong with eggs, Baked Egg Surprise is a delicious treat that is easy to prepare. If you have time, you can cook Spanish Omelette or Eggs Benedict.

If you are in the mood for pancakes you can whip up some Blueberry and Banana Pancakes or Baked Peach Pancakes.

Unfortunately not everyone has time to have breakfast at home. What you can do is prepare something that your partner can take to work like Bartlett Pears Muffins or Apple Cinnamon Streusel Muffins. A Berry Banana Power Smoothie is also a filling drink that can be taken to go. Place a sweet note on the containers for a personal touch.

You don’t have to wait until the evening to celebrate Valentine’s Day. This sweet initiative will definitely brighten up anyone’s day.
