Fruit Cocktail Brownies

Fruit cocktail brownies are delicious sweets that are perfect for the holiday season. Serve them during parties or give them away as gifts.

 

Serves 16

Ingredients:

1 439g can fruit  cocktail, drained (reserve 2 tablespoons of syup)

2/3 cup butter

3/4 cup cocoa powder

2 cups sugar

4 pcs eggs

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon fine salt

1/2 cup cashew nuts, coarsely chopped

 

Preheat the oven at 350F and slightly grease a 13”x9” pan with butter.

Next, melt the butter in a medium sized saucepan over low heat. Add the cocoa and stir until it is dissolved. Remove from heat.

Sift the flour, baking powder, salt and sugar into a large mixing bowl. Add the cocoa mixture, eggs, vanilla and reserved cocktail syrup. Stir until all the ingredients are well combined.

Place the nuts and fruit cocktail in the batter. Mix well. Transfer the mixture into the greased pan. Bake it in the oven for 30-45 minutes or until set. Test doneness with a toothpick. Insert it into the brownies and it must come out clean.

Let it cool for 5 minutes before slicing. Serve warm or at room temperature. Store it in a sealed container if desired.

Cheesecake Brownies

Cheesecake brownies are lovely treats. They are sweet and a bit salty too. They make good snacks or desserts.

You can also turn serve it as a cake. All you have to do is pull the hanging baking paper on the side to be able to carefully remove the cheesecake brownie from the pan without slicing it. Use a round pan if desired.

 

Makes 16 slices

Ingredients:

Melted butter, to grease

150g butter, chopped

300g good-quality dark cooking chocolate, chopped

3 eggs

1 cup caster sugar

1 1/2 cups plain flour

1/4 cup sour cream

1 250g pack cream cheese room temperature

 

Preheat the oven at 180°C and then lightly grease a 20cm cake pan with melted butter. Line the base with non-stick baking paper and let it hang on the sides.

Place a small pan over low heat. Melt the butter and chocolate in a saucepan over low heat. Cook it for 5 minutes or until the chocolate melts and the mixture is smooth. Stir occasionally. Remove from heat and let it cool for 5-10 minutes.

While waiting for the chocolate to cool, place 2 eggs in a small bowl and whisk them. Gradually add it to the chocolate mixture while stirring. Fold in the flour and the sour cream. Mix well.

Cream the cheese in a mixing bowl using an electric beater and then add the sugar. Continue to beat it until it becomes smooth. Add the remaining egg and beat until all the ingredients are well combined.

Place some chocolate mixture in the greased pan. After, spoon some cream cheese mixture. Layer them alternately until you use up all the ingredients. Use a skewer or even a chopstick to make a swirl effect. Bake it in the preheated oven for 30 minutes or until it is cooked. Test doneness by inserting a toothpick or skewer. It must come out clean.

Once it is ready, remove it from the oven and let it cool for one hour. Cut it into squares and then serve.

Red Chilli and Chocolate Brownies

Chilli? And Chocolate? Sound like a random mix? It goes remarkably well together, so give it a go! The heat and flavour of the chilli will complement the richness of the Chocolate, so it needs to be good quality to taste right.

Chocolate Brownies

For 16 to 18 squares:
– Butter (for greasing the pan)
– 300g good-quality dark chocolate (at least 70% cocoa Solids)
– 250g hard butter, cut into cubes
– 5 eggs
– 325g caster sugar
– 200g plain flour
– 2 medium red chillies, seeds removed and cut into small strips
– 120g plain chocolate chips

1. Heat the over to 180 C/ 350 F/ Gas Mark 4. Try to avoid using a fan setting. Line the sides of a baking tray with the butter.

2. Melt the dark chocolate and butter in a heatproof bowl over a pan of simmering water. Make sure that the bottom of the bowl isn’t in the water, because it will damage the chocolate if it gets too hot

3. When fully melted, remove from the heat and allow to cool. Whilst waiting, mix the eggs and sugar together, and slowly pour the chocolate and butter mix on top, combining well.

4. Sift the flour and gently fold into the mix. Add the chocolate chips and chillies into the mix, and then pour into the buttered tray, then bake for 20 to 25 minutes or until the brownies look cracked on top, but slightly undercooked. The chocolate will set as it cools, and the brownies will start to firm up.
