Burgers with Horseradish Cream

Burgers with horseradish cream  is an interesting twist to the classic hamburger recipe that is perfect for Labor Day weekend. It has a burst of spice and aroma, with a touch of saltiness from the sea. The horseradish cream on the other hand compliment the mix of flavors by giving off a neutral creamy taste. It also adds more texture to this yummy dish.

It is highly encouraged to use fresh bread crumbs. All you need to do is trim off the sides of a few pieces of day old loaf bread (usually 4 slices make 1 cup). Process them in a blender or food processor for 1-2 minutes or until it is fine. Otherwise, make sure that you use very fine bread crumbs that can be bought in the supermarket.  Adding some herbs to this recipe is also a great idea, so feel free to experiment as you wish.

 

Ingredients:

750g beef mince

1 cup breadcrumbs, preferably fresh

1/2 teaspoon finely grated lemon rind

5 drops tabasco sauce

1 egg, lightly beaten

6 oysters

6 burger buns

Salt and ground pepper to taste

3 cups shredded lettuce

For the horseradish cream:

1/2 cup sour cream

2 teaspoons horseradish relish

Salt and ground white pepper to taste

 

Combine the breadcrumbs, tabasco, egg and lemon rind in a large mixing bowl. Season it with salt and pepper. Mix well.

Divide the beef mince mixture into 6 and make patties. Place them on a plate or baking tray. With your thumb, press the center of the patty to make an indentation. Place an oyster in the hole and smooth some mince over it to enclose it. Cover the plate or tray with cling film and refrigerate the patties for 1 hour.

Next, prepare the horseradish cream by placing the sour cream and horseradish relish in a small bowl. Mix well and season it with salt and pepper. Refrigerate.

Lightly grease a grill or non-stick frying pan with oil. Cook the burgers in batches over medium heat for 6-8 minutes per side or until they are cooked through; making sure that you turn them only once.

Place a burger patty on a burger bun and spoon some horseradish cream over the patty. Top it with shredded lettuce. Repeat this for the remaining ingredients. Serve immediately with chips or fries.

Chicken Rissoles in Mushroom Sauce

I recently made cream cheese stuffed burgers. After then, I realized that whenever I make burger patties or rissoles I use ground beef so I decided to think of other simple ground meat recipes. I can say that this is a spinoff of burger steak with mushroom gravy, except it has a creamier sauce and it is made of chicken.

Chicken rissoles are a healthier alternative to beef patties. The sumptuous mushroom sauce makes it more delectable to the taste buds. This dish is a perfect with salads or potato dishes like mashed potatoes, baked potatoes and even potato chips. It can also be served with rice too.

Ground turkey can be used for this recipe if you want a leaner type of meat. Just add some vegetables like carrots to the patties so that they keep moist since there is minimal fat.

 

Serves 4-6

Ingredients:

1kg ground chicken

1 cup breadcrumbs (preferably fresh)

1 tablespoon dried tarragon

1 small onion, finely chopped

1/4 cup mayonnaise

Salt and pepper to taste

2 tablespoons olive oil

For the mushroom sauce:

40g butter

3 spring onions, finely chopped

300g button mushrooms, sliced

1/4 cup white wine

3/4 cup cream

 

First, prepare the sauce by melting the butter in a small frying pan over medium heat. Stir-fry the mushrooms and spring onions for 4-6 minutes or until they are soft. Pour in the wine and stir in the cream. Reduce the heat to low and let it simmer for 8-10 minutes until the sauce thickens. Remove from heat and cover to keep warm.

Combine the ground chicken breadcrumbs, tarragon, onion and mayonnaise in a large bowl. Season it with salt and pepper. Mix well. After, divide the mixture into 6 and make patties.

Heat the oil in a large frying pan over medium heat. Fry the rissoles in batches for 6-8 minutes per side, turning them only once. Do not overcrowd them in the pan. Lastly, transfer the cooked patties to a plate lined with paper towels to drain the excess oil.

Place the rissoles on individual plates or on a serving platter. Top it with mushroom sauce and serve immediately with rice or potatoes.

Herbed Cheeseburgers

Herbed cheeseburgers are the healthy alternative to fast food burgers. Use lean meat and try to keep the ingredients low in salt and low fat if possible. This recipe is perfect for kids and those who are trying to watch what they eat.

 

Makes 8 patties

Ingredients:

250g extra lean ground beef

1 egg slightly beaten

1 small onion, finely chopped

1 cup breadcrumbs

2 teaspoons low-salt soy sauce

2 teaspoons low salt tomato paste

2 teaspoons coriander, finely chopped

2 teaspoons chives, finely chopped

2 teaspoons basil, finely chopped

8 slices low-fat cheese

2 tablespoons olive oil

 

Place the ground beef, onion, 1/4 cup breadcrumbs, egg, soy sauce, tomato paste, coriander, basil and chives in a large bowl. Mix well. After, divide the beef mince mixture into 8 parts and then coat them with the remaining bread crumbs. You may use an egg ring to give the patty a round shape.

Grease a medium sized non-stick frying pan or stovetop grill with oil. Cook the burgers over high heat for 2-3 minutes on each side or until browned or the patties have grill marks.  Transfer the patties to a plate and drain the excess oil using paper towels.

Put the burger patties in whole meal or whole grain buns and top it with cheese,  lettuce, cucumbers, tomato and pineapple rings if desired. Ketchup, mayonnaise and mustard are also good additions to this dish.

Tequila Lime Burgers

Burgers are one of the most craved for comfort food. Most if not all though have their preferences when it comes to this all-time favorite snack. Here is a must try variation of the classic beef burgers everyone adores.

 

Serves 8

Ingredients:

2 pounds ground beef

3 tablespoon fresh basil, chopped

1/4 cup steak sauce

1/4 cup Worcestershire sauce

2 tablespoons Montreal steak seasoning

2 tablespoons tequila

2 tablespoons fresh lime juice

1 teaspoon lime zest

 

Preheat the grill and lightly grease it with oil to prevent the meat from sticking.

Combine the ground beef, basil, steak sauce, Worcestershire sauce, Montreal seasoning, tequila, lime juice, and lime zest in a large bowl. Stir until fully mixed. Form 8 patties from the mixture.

Cook patties on preheated grill to desired doneness. For medium well, cook the both sides of the patties for about 5 to 7 minutes depending on the heat. For well done, cook each side for 7 to 10 minutes.  Place the burger patties into buns and put desired dressing and vegetables.
