Cheese Stuffed Jalapenos

I am not a big fan of spicy food and I am not the type who can eat jalapenos on the side, but this recipe is different. The richness of the cheese overpowers the spiciness, making this simple dish incredibly mouthwatering.  It makes a good appetizer or snack and it is perfect for sharing.

 

Ingredients:

25 medium sized fresh jalapeno peppers, cut lengthwise and seeded

8oz cream cheese, softened

3 cups finely shredded cheddar cheese

4 cloves garlic minced

4 bacon strips, cooked and crumbled

 

Preheat the oven at 400F.

Boil water in a large saucepan. Cook the jalapenos for 5 minutes. Drain and rinse them with cold water.

In a medium sized mixing bowl, combine the cream cheeses, garlic and cheddar cheese. Mix well.

Spoon some cheese mixture into the peppers and place them in a greased baking dish. Bake them for 10-15 minutes or until the cheese is melted. Transfer to a plate and sprinkle with bacon bits before serving.
