I am not a big fan of spicy food and I am not the type who can eat jalapenos on the side, but this recipe is different. The richness of the cheese overpowers the spiciness, making this simple dish incredibly mouthwatering. Â It makes a good appetizer or snack and it is perfect for sharing.
Ingredients:
25 medium sized fresh jalapeno peppers, cut lengthwise and seeded
8oz cream cheese, softened
3 cups finely shredded cheddar cheese
4 cloves garlic minced
4 bacon strips, cooked and crumbled
Preheat the oven at 400F.
Boil water in a large saucepan. Cook the jalapenos for 5 minutes. Drain and rinse them with cold water.
In a medium sized mixing bowl, combine the cream cheeses, garlic and cheddar cheese. Mix well.
Spoon some cheese mixture into the peppers and place them in a greased baking dish. Bake them for 10-15 minutes or until the cheese is melted. Transfer to a plate and sprinkle with bacon bits before serving.
