Chili Garlic Clams

Clams are delicious bounties of the sea that are light and savory. They have a distinct flavor that is enhanced by the garlic and chili. You can eat this dish as an appetizer or pair it with fried rice. I assure you that it is very delicious.

 

Serves 4

Ingredients:

1 kg clams

8 cups water

1/4 cup salt

2 tablespoons oil

2 teaspoons ginger, chopped

6 cloves garlic, minced

1 large fresh red chili, deseeded and sliced

2 teaspoons light soy sauce

1/4 teaspoon salt

1 tablespoon rice wine

 

Place 6 cups of water and 1/4 cup salt in a basin. Soak the clams for 2-3 hours. Drain the clams and rinse them with running water.

In a large skillet or wok, sauté the garlic, ginger and chili for 2-3 minutes or until it becomes fragrant. Stir in the soy sauce and cook for 1-2 minutes until the garlic, ginger and chili caramelize. Add the clams, 1/4 teaspoon of salt and rice wine. Cook for 10-15 minutes or until the clams open. Serve immediately.
