Cottage Rolls

Cottage rolls are vegetarian sausage rolls that are just as good. It is a healthy alternative that is perfect for snacks or as a side. You can also store it in an air-tight container if you want to prepare it a day ahead. It is best served warm, so don’t forget to reheat it.

 

Ingredients:

1 cup low fat cottage cheese

3 eggs

1 small onion, chopped

1/2 cup pecans

1 tablespoon Japanese soy sauce (Kikkoman)

1/2 cup finely grated carrot

1/2 cup breadcrumbs

1 cup quick oats

3 25cm x 25cm sheets frozen ready-rolled puff pastry, thawed

1/4 cup milk

1 tablespoon poppy seeds

Five spice powder

 

Preheat the oven at 200C and line 2 baking trays with baking paper.

Blend the cottage cheese, eggs, onions, soy sauce and pecans in a food processor 1-2 minutes. Transfer the mixture to a large bowl and add the carrots, oats and breadcrumbs. Put a dash of five spice powder. Mix well. Divide the mixture into 6 portions.

Cut the pastry sheet in half to make 6. Brush the sheets with milk and place filling on one end; roll. Slice each roll in half or depending on the size you want. Place the rolls in a baking tray and brush them with the remaining milk. Sprinkle it with poppy seeds and then bake it for 30-40 minutes or until golden brown. Serve warm or store in an air-tight container.
