Blackforest Cheesecake

Blackforest cheesecake is an incredibly delicious no bake cheesecake recipe. It is a no fuss dessert that is perfect any occasion. If you want to make it more sinful, you may top the cheesecake with whipped cream before adding the chocolate shavings and the cherries.

 

Serves 8

Ingredients:

150g butter, melted

200g chocolate biscuits

200g good-quality dark cooking chocolate, chopped

1 tablespoon boiling water

1 teaspoon unflavored powdered gelatin

1/3 cup, firmly packed brown sugar

1 670g jar maraschino cherries with stems

2 tablespoon caster sugar

1 tablespoon corn flour

Chocolate shavings for garnish

Grease a 10 x 2 1/2 springform pan with melted butter.

 

Put the chocolate biscuits in a food processor and process it for 30 seconds until they are crushed. Add the butter and blend it for another 15 seconds until they are well combined. Place the crust mixture in the springform pan and press it firmly onto the base and sides of the pan using a wooden spoon. Cover and refrigerate it for 30 minutes.

Drain the cherries and reserve the syrup. Set aside. After, place the corn flour in a small saucepan over high heat. Gradually add the cherry syrup. Keep on stirring it for around 5 minutes or until it boils. Add the cherries. Stir gently to make sure the cherries are coated in the sauce. Remove from heat and let them cool completely for around 30 minutes.

Place the chopped chocolate in a double broiler or heatproof bowl over simmering water to melt it. Stir constantly until the chocolate melts.

While melting the chocolate, quickly combine the water and the powdered gelatin in a small bowl. Mix it well until the gelatin is dissolved.

Combine the sugar and cream cheese in a large mixing bowl and beat it using an electric beater or mixer until it becomes smooth. Fold in the chocolate mixture and the gelatin. Beat it for another 10 seconds until all the ingredients blend together.

Spoon the chocolate cream cheese mixture into the springform pan with the chilled crust. Smooth the surface using a knife or a spatula. Refrigerate the cheesecake for 1 hour or until it is set.

Once it is ready, sprinkle the cheesecake with shaved chocolate and then top it with cherries. You may also slice it first and then transfer the cheesecake slices to individual plates before garnishing it with the shaved chocolate and cherries. It is best served chilled.
