Refreshing Egyptian Drinks

February 19, 2011 By Delia

As we all know, it is very hot in Egypt. This is why they have various coolers to refresh you during the day. Here are some simple recipes for you to try.

Raspberry Mint Cairo Cooler

It’s just like a virgin Mojito. You can add white rum to give it an extra kick.

1    cup fresh mint

2 1/2   cups pineapple juice

1     cup raspberries

1 cup fresh, strained lime juice

1-1/2 cups granulated sugar

1-1/2 cups water

16   ounces cold lemon-lime soda

Lime wedges for garnish

Prepare the limeade ahead of time. In a medium saucepan under medium low heat, combine the water and sugar. Heat until the sugar melts. Stir occasionally. Let it cool and freeze it into ice cubes. Freeze the raspberries as well.

Combine all the ingredients in a glass or pitcher. Add the mint. Garnish the glass or pitcher with a lime wedge.

Karkady –Hibiscus Tea

Is an unusual but popular drink in Egypt. It is made of dried hibiscus petals. The best hibiscus comes from Upper Egypt, so don’t forget to bring home some if you go there.

1 cup hibiscus petals

2 cups sugar

Remove the stems or leaves from the dried petals. Soak it in cold water for 1-2 hours; you may refrigerate it if desired. Transfer it to a pot of water and let it boil. Remove from the pot and use filter paper to strain the liquid from the flower petals. After, place the petals in cold water for another 1-2 hours and then boil in water. Repeat the process until the petals lose its reddish color. Add the sugar and stir until the sugar granules dissolve. Serve warm or ice cold.

Fruit Lassi

This is my personal favorite, but I prefer the plain (yogurt flavored) or the cucumber yogurt lassi. Use any fruit you wish.

2     cups whole milk yogurt

1     cup ice water

1     cup cold milk

1/2   teaspoon ground cardamom

1      tablespoon rose water

2       mangoes, peeled and cut into cubes or 5 ripe bananas, sliced

Freeze the fruits or substitute water with crushed ice. Combine all the ingredients in a blender and blend until smooth.

Pour into individual glasses and garnish with fruit or sliced almonds if desired.

Halloween Childrens Drinks

October 29, 2010 By Delia

Fire-breathing dragons, Evil Witches Brew and Gruesome Buckets of Blood, these drips will provide the finishing touches to any Childrens party that you’re organising.
Really push the boat out, and decorate the cups you’ve got to look like Witches and Wizards hats, and the bowls to look like bubbling cauldrons

Witches Cauldron

2 Cups of Lemonade
1/2 Cup of Orange Juice
Juice of 1 Lime, or 2 tbsp Concentrated Lime Juice
4 Cups Apple Juice
2 tbsp Cinnamon
1 tsp Coconut Flavouring (optional)

1. Combine all the ingredients in a large punch bowl, and stir well
2. Refridgerate until needed to serve

Bug Juice

10 Cups of Frozen Strawberries
3 cups of Ice
3 cups of Fruit Punch (lots of different flavoured Juices – Orange, Cranberry, Apple, Pineapple, Tropical)
2 cups of Limeade
2 cups Raisins

1. In a blender, add the Frozen Strawberries, Ice and Fruit Punch and mix on pulse. You may have to do this in several batches, depending on the size of the blender!
2. As you finish blending the batches, pour into a large Punch Bowl. When all the mix is in the bowl, mix in the Limeade.
3. Add in the Raisins, and serve

Chunky Chocolate Milkshake!

October 21, 2010 By Delia

The ultimate in Guilty Pleasures! A lot of people like a really thick, smooth milkshake. My personal preference is to have something so thick and chunky, you nearly need a spoon to drink it. The chunks in the drink will add more flavour to the drink, and give you a nice suprise at the bottom!

50g Chocolate cubes (dark, milk, white…your choice!)

Spray Cream

75ml Chocolate Sauce

125ml Milk

75ml Cream

1. Mix the milk and cream with some of the chocolate cubes

2. Add the Chocolate Sauce, and pulse (hint: for a more chunky shake, try using a cocktail shaker)

3. Decorate Glass with some chocolate sauce

4. Serve in the glass, top with spray cream and grate some of the remaining chocolate on top

Real Lemonade

September 24, 2010 By Delia

5c for a glass? Anyone? No? Okay, try making some of this lovely classic yourself to drink on a warm evening

Bowl full of Lemons

For 6 glasses:
– Juice and zest of 6 whole lemons (or, if you want a sharper taste, more lemons)
– 150g sugar
– 1.2 litres cold water

1. Mix the juice, zest and sugar in a jug, and mix until dissolved.

2. Pour water in, and place in the fridge for at least 2 hours to allow the flavours to mix and properly chill. Try with carbonated water for a fizzier drink.

3. Serve – either over ice, on it’s own, or with a bit of fresh mint.

What’s Next:

Place tea bags in bowl or pitcher. Pour boiling water over tea bags. Add sugar, stirring to dissolve. Let tea bags steep in sugar water several hours or overnight. discard tea bags. Pour tea into a large bowl. Add juices & peaches, stirring well. Pour equal amounts into two one-gallon jugs. Add water to each to fill jug. Refrigerate. Shake well before serving.

You can spice up the tea with a hint of almond flavoring that is sure to make your taste buds tingle.
