Walnut Crusted Fish Nuggets

Walnut crusted fish nuggets have a crisp and nutty taste that will definitely please the tastebuds. It is a great appetizer or a main dish if paired with salad or rice.

 

Serves 4

Ingredients:

1 cup toasted walnuts

Zest from 2 lemons

1 teaspoon dried sage

500g fish fillet cut into 1 inch cubes

1/2 cup all-purpose flour

1 egg, lightly beaten

Salt and pepper to taste

Oil for frying

 

Place the walnuts in a food processor or blender. Process it or a minute or until it becomes fine. Transfer it to a medium sized bowl and add the lemon zest. Mix well and set aside.

Season the fish with salt and pepper. Dredge the fish cubes in flour. Get a piece and dip it in the beaten egg. Coat it in the lemon and walnut mixture. Put it on a tray. Repeat the process for the remaining fish.

Heat the oil in a deep fryer or frying pan. Fry the coated fish cubes in batches for 2-4 minutes or until they are golden brown. Transfer the cooked fish to a plate lined with paper towels or a colander to drain the excess oil. Place them on a platter and serve with garlic mayonnaise or honey mustard sauce. Serve immediately.

Fish Nuggets with Curry Dip

These delicious fish bites are so addicting especially when warm. They are great appetizers for parties too. The fish’ flaky texture is perfect for the curry dip. You may add a drop of honey if desired to sweeten the sauce. It is also a good idea to add some salt and pepper or even parmesan cheese to the cornflake crumbs to make the dish tastier. Yum!

 

Serves 2

Ingredients:

260g boneless white fish fillet

2 tablespoons whole meal flour

1 egg white

3 tablespoons corn flake crumbs

For the curry dip:

1/4 cup low fat mayonnaise

1/4 teaspoon curry powder

In a small bowl, combine the mayonnaise and curry powder. Mix well and cover. Refrigerate.

Preheat the oven to 180C and cut the fish into chunks.

Dredge the fish in flour. Make sure that they are coated.

Put the egg whites in a bowl and whisk it for 1 minute. Dip the fish cubes in egg and then coat it with cornflake crumbs.

Place the coated fish on a lightly greased baking tray. Bake the fish for 10 minutes. Turn the fish cubes and bake it for another 5 minutes. Remove from oven and transfer to a plate.

Serve warm with the curry dip.
