Pavlova

Pavlova is a fruit topped merengue, a dessert that is often served during celebrations and holidays in New Zealand and Australia. I personally like it with a variety of fruits, but you can stick with one if preferred. Chocolate flavored merengue is also a yummy addition to this treat.

Ingredients:

6 egg whites

2 cups caster sugar

A pinch cream of tartar

300ml thickened cream

1 1/2 teaspoon vanilla extract

1/4 cup strawberries, hulled and sliced

2 kiwis, peeled and sliced

1/4 cup raspberries

1/4 cup blackberries

1/4 cup blueberries

1/4 cup peaches, chopped

 

Preheat the oven to 150F.

Line a baking tray with parchment paper and make a 7 inch circle at the middle.

Place the eggs in an electric mixer and beat them at medium speed until they form soft peaks. Slowly mix in the sugar and then add the cream of tartar. Continue to whisk it until they form stiff peaks and the sugar has melted. Fold in the vanilla extract with a spatula. After, place the meringue in the circle on the parchment paper. Smooth the edges and make sure the sides are higher than the center.

Bake the merengue for 1 hour or until the outside is firm. Turn off the oven and open the door slightly. Let the merengue cool. You can also store it in an air tight container if you are preparing it in advance.

Beat the cream, 1 1/2 tablespoons of sugar and half a teaspoon of vanilla extract using an electric mixer until soft peaks form.  Place the whipped cream at the center of the merengue and top it with fruits. Serve immediately.
