Pork and Strawberry Salad

Pork and strawberry salad is a delightful dish with a mix of fruity, salty and sour tastes that you will enjoy. Each bite gives off a burst of flavors. Pair it with sparkling wine for a simple and yet classy meal.

 

Serves 4

Ingredients:

400g pork fillets

2 tablespoons olive oil

2 teaspoons cracked black pepper

1/3 cup balsamic vinegar

250g strawberries, hulled and halved

2 teaspoons lemon juice

80g salad leaves

50g goat’s cheese, crumbled

1 tablespoon sunflower seeds

 

Place the pork in a shallow dish. Drizzle it with half of the oil. Sprinkle it with pepper. Rub the cracked pepper on the pork fillets and let it stand for at least fifteen minutes.

Heat the remaining oil in a large frying pan over medium heat. Fry the pork for 6-8 minutes per side or until cooked. Transfer it to a plate and cover it. Let it stand for 5 minutes and then slice it into thin strips.

In the same pan, pour in the balsamic vinegar. Let it simmer for five minutes or until it is reduced in half.

Combine the strawberries, balsamic vinegar and lemon juice in a bowl. Toss until the strawberries are coated.

Place the salad leaves on a platter or large salad bowl. Add the pork and the strawberry mixture. Gently toss. Top it with the crumbled goat’s cheese and sunflower seeds. Serve immediately.

Spinach Salad with Steak & Blueberry Dressing

Combining the ingredients will bring you a healthy and satisfying supper. Serve with grilled baguette and a glass of rosé.

Makes 4 servings

 

Ingredients:

1 cup fresh blueberries, divided

1/2 cup chopped walnuts, toasted

3 tablespoons raspberry vinegar

1 tablespoon minced shallots

1 teaspoon sugar

1/2 teaspoon salt, divided

3 tablespoons walnut or canola oil

1 lb. sirloin or strip steak (1-1 1/4 inches thick), trimmed

1/2 teaspoon freshly ground pepper

8 cups baby spinach

1/4 cup crumbled feta cheese

 

Preheat the stovetop grill over medium heat and lightly grease it with oil. Season the steak with the remaining 1/4 teaspoon salt and pepper.

Combine 1/4 cup walnuts, 1/4 cup blueberries, shallots, vinegar, sugar and 1/4 teaspoon of salt on a food processor or blender. Process it for 30 seconds. Gradually add the oil to form a chunky paste. Transfer the dressing to a bowl.

Grill the steak for 5-6 minutes per side, depending on your desired doneness. Once it is cooked, let it rest on a clean cutting board for 5 minutes.

Meanwhile, place the spinach in a large salad bowl. Add the blueberry dressing and gently toss. Divide the spinach among 4 plates.

Slice the steak thinly and then top the spinach salad with it. Sprinkle it with the remaining blueberries, walnuts and feta cheese.

Orange and Peanut Salad

Here is a simple salad recipe that is delectable in its unique way. It has a blend of flavors that burst into every bite. You may use arugula instead of lettuce if you want to add some bitterness to the garlicky, sweet and tangy flavors. White onions are also great replacements to the red onions if you find the taste sharp or overpowering.

 

8 servings

Ingredients:

2 seedless oranges

1 head Boston lettuce, torn into small pieces

1 medium red onion, sliced thinly

1/4 cup seedless black olives, chopped

1/2 cup peanuts, crushed

2 garlic cloves, peeled

1/4 cup orange juice

1 1/2 tablespoons white wine vinegar

1 tablespoon lemon juice

1/2 teaspoons sugar

1/4 teaspoon prepared mustard

2 teaspoons orange peel, grated

2 teaspoons olive oil

 

Peel the oranges and section them to remove the membranes. Next, place the lettuce, oranges, olives and onions in a large salad bowl. After, combine the garlic, orange juice, white wine vinegar, lemon juice, sugar, mustard and olive oil in a food processor or blender. Blend it for 1-2 minutes or until the garlic has been broken down to bits. Pour the dressing over the salad and gently toss. Sprinkle it with the crushed peanuts and grated orange peel. Serve chilled.
