Gazpacho Soup

Since the holidays are fast approaching, everyone is probably thinking what to prepare for parties and gatherings. I immediately thought of sharing this gazpacho soup recipe. It is a great starter which is pleasing in all senses because it looks nice and it tastes good too.

 

Ingredients:

3 cups very ripe tomatoes

1 1/2 cups cucumber peeled and diced

3 garlic cloves chopped

1/2 cup green pepper, seeded and diced

1/2 cup red pepper, seeded and diced

1/2 cup water

1/4 cup sherry vinegar

Salt and black pepper to taste

2 tablespoons red pepper, seeded and finely chopped for serving

2 tablespoons cucumber, finely chopped for serving

 

Combine the tomatoes, cucumbers, chopped garlic, green pepper, red pepper, water and sherry vinegar in a food processor or blender. Process it for a minute or two or until the mixture is smooth. Season it with salt and pepper. Transfer it to a bowl or any sealed container. Refrigerate it for at least 3 hours. Place the gazpacho in individual bowls or cups. Garnish with cucumber and red bell peppers before serving.
