Mocha Coffee Jelly

Mocha coffee jelly is a yummy dessert that is easy to prepare. You can make it ahead of time and just chill it until needed. It is perfect for parties or intimate dinners. It can also be served as an afternoon treat.

 

Serves 4

Ingredients:

For the coffee jelly:

2 teaspoons instant coffee

2 cups hot water

1 tablespoon sugar

3 tablespoons unflavored gelatin

For the mocha mousse:

1 teaspoon instant coffee

1/2 cup hot water

1/2 cup chopped semisweet chocolate

2 tablespoons butter

3 egg yolks

1/4 cup sugar

1 1/2 cups whipped cream

Chocolate shavings, for serving

Whipped cream, for serving

Cocoa powder, for serving

 

To prepare the coffee jelly, place hot water in a small saucepan. Dissolve the coffee in the water.  Stir in the sugar and gelatin.  Place the saucepan over medium heat and allow it to boil. Pour it into a 9 inch square pan and let it cool completely until it is set. Slice it into cubes.

Next prepare the mousse by dissolving the coffee in hot water. Set aside. After, melt the chocolate in a heat proof bowl over boiling water or a double boiler. Remove from heat and fold in the butter and half of the coffee mixture.  Let it cool.

In a separate saucepan, whisk the egg yolks. Add the remaining coffee mixture and the sugar. Place it over low heat and cook it for 2 minutes. Stir constantly. Remove from heat and add in the chocolate mixture and the whipped cream. Mix well.

Place the cubed coffee jelly in dessert cups or glasses. Spoon some mocha mouse over it. Chill it in the refrigerator for 30 minutes or until set. Top it with whipped cream, chocolate shavings and cocoa powder before serving.

Raspberry and Blueberry Champagne Jellies

These deliciously decadent Red and Black berry desserts will leave your guests astonished at your culinary capabilities, but they’re incredibly simple to create.

Champagne Jellies

Taking only fifteen minutes to prepare, you’d need to leave these for three to four hours at least to chill and set, so prepare in plenty of time.

To Serve 6
5 Leaves Gelatine
100ml Elderflower Cordial
500ml Champagne or Sparkling Wine
75g Raspberries
75g Blueberries

1. Using a pair of Scissors, cut the Gelatine into small pieces, and soak in a bowl along with four tablespoons of Cold Water for ten minutes. Place the bowl over a pan of gently simmering water, and heat until dissolved, stirring all the time.
2. In a large Jug, blend the Elderflower Cordial with the Champagne, then quickly stir in the Gelatine.
3. Pour into six decorative glasses that you’ll be using to serve from, before adding some of the Raspberries and Blueberries to each one. Chill for at least three to four hours, or overnight if possible to make sure they are fully set.

Strawberry Yogurt Jellies

Strawberry Yogurt Jelly
A fruity family favourite – these jellies have a mixture of textures, making them a treat for anyone. A great treat to have on offer at any party, and also works well as a dessert for a more formal dinner party.

Once fully assembled,  try to serve as soon as possible, to prevent the layers combining, or to prevent anything that isn’t fully assembled collapsing! Try drizzling with some Strawberry Sauce for a very decadent treat.

To Serve 6

6 sheets of Gelatine

600ml Strawberry and Apple Juice

250g Strawberries

1tbsp Icing Sugar

150g 0% Fat Greek Yogurt

1.       Soak the Gelatine sheets in four tablespoons of cold water for ten minutes.

2.       Het 150ml of the Strawberry and Apple Juice in a pan, and when hot, add the Gelatine sheets, after shaking off the excess water. Stir until dissolved, before adding the remaining Juice and stirring it well.

3.       Pour 200ml of the Juice into a small bowl and leave to set in fridge. Pour the rest into six small glasses and leave to chill in the fridge until almost set – around one and a half hours.

4.       Keeping three of the Strawberries in one piece, cut the leaves off the rest. Place the leaf-less Strawberries into a blender with the Icing Sugar and most of the yogurt (keep about six teaspoons for decoration), and pulse until roughly chopped. Stir into the bowl of Jelly, and divide between the six glasses, layering on top of the existing Jelly.

5.       Leave to set for thirty more minutes, before decorating with the reserved Yogurt and half of a Strawberry.
