Savory Meat Loaf

Meatloaf has always been the go-to recipe in our home when we need to prepare something filling and delicious in a short amount of time. I don’t know how many times a meatloaf has saved us when guests suddenly arrive unannounced and we have to feed them.

Beef and Pimiento Loaf

Beef and pimiento loaf is a great main course or party dish. The saltiness from the cheeses gives it more taste. Add more layers or fillings if desired. You may also use other types of minced meat. Make sure to add vegetables for the filling if you are using turkey meat, so that the loaf will not dry up.

 

Serves 6

Ingredients:

1kg minced beef

2 cups fine bread crumbs

1/4 cup tomato paste

1 tablespoon dry mustard powder

1 teaspoons dried mixed herbs

4 garlic cloves, crushed

1 egg, lightly beaten

1 cup chopped pimiento

1/3 cup chopped fresh basil

2 tablespoons chopped black olives

250g ricotta cheese

125g feta cheese

Salt and ground pepper to taste

 

Preheat oven to 180C and line a loaf pan with aluminum foil.

Place the ground beef, breadcrumbs, tomato paste, mustard, mixed herbs, garlic and egg in a large mixing bowl. Season it with salt and pepper to taste. Mix well. Divide the mixture into three parts.

Next place the olives, pimiento, basil and olives in a small bowl. Mix well.

Put one portion of the beef mince mixture in the loaf pan. Top it with half of the pimiento mixture. Repeat the layering until all the ingredients are used up. Bake it in the preheated oven for 1 hour or until it is browned. Drain the liquid and let the loaf stand for 5 minutes. Remove it from the pan and slice it into half inch pieces.

Combine the ricotta and feta cheese and serve it with the sliced loaf.

Home-style Meatloaf

Home-style meatloaf is a delectable recipe that is great for dinner. Serve it with potatoes, salads or mixed vegetables. You can also prepare it ahead of time and just reheat it in the oven. Leftovers can also be eaten with eggs for breakfast.

 

Serves 6-8

Ingredients:

6 bacon strips

500g ground beef

500g ground pork

1 can cream of chicken soup

1 medium sized carrot, chopped

2 medium sized brown onions, chopped

3 eggs

4 slices loaf bread, edges trimmed and flaked

1 tablespoon Dijon mustard

1/2 tablespoon horseradish

3 tablespoons ketchup, preferably sweet

2 teaspoons soy sauce

1 teaspoon Worcestershire sauce

3 tablespoons parsley, finely chopped

1 tablespoon Italian seasoning

2 tablespoons sweet pickle relish

2 tablespoons grated Parmesan cheese

For the gravy:

Meatloaf drippings

3 tablespoons all-purpose flour

3/4 cup beef broth

1/4 cup red wine

1 tablespoon soy sauce

Salt and ground pepper to taste

 

Preheat the oven at 400F and lightly grease a loaf pan with oil. Line it with bacon strips.

Place the ground pork, ground beef, chicken soup, carrots, onions, eggs, flaked bread, Dijon mustard, horseradish, ketchup, seasoning, Worcestershire sauce, finely chopped parsley, Italian seasoning, pickle relish and Parmesan cheese in a large mixing bowl. Mix until all the ingredients are well combined.

Transfer the meatloaf mix into the loaf pan and pack it well. Cover it with aluminum foil and bake it in the preheated oven for 1- 1 1/2 hours or until it is cooked. Remove from oven and let it stand for 15 minutes. Gently remove the meatloaf from the loaf pan and set it on a chopping board. Slice it into half inch pieces.

Pour the meatloaf drippings into a small sauce pan over medium heat. Add the flour to the drippings and whisk until there are no more lumps. Slowly add the beef broth, wine and liquid seasoning. Cook it for 4-6 minutes or until the sauce is thick. Season it with salt and pepper as desired.

Put the meatloaf on a serving plate or individual plates and serve warm with gravy.

Italian Style Meatloaf

Meatloaf is an ultimate comfort food that is cooked differently in each household. It is best eaten with salad or steamed vegetables. I personally think that it is a hit for both the young and old. It is perfect for family dinners and leftovers can be refrigerated and saved for the next meal.

 

Ingredients:

1 1/2 pounds ground beef

2 eggs, beaten

3/4 cup dry bread crumbs

1/4 cup ketchup

1 teaspoon Italian-style seasoning

1 teaspoon dried oregano

1 teaspoon dried basil

4 cloves garlic, minced

1 large onion, finely chopped

1 (14.5 ounce) can diced tomatoes, drained

1 cup tomato sauce

1 1/2 cups shredded mozzarella cheese

2 tablespoons extra-virgin olive oil

Salt and pepper to taste

 

Preheat oven to 350F.

In a skillet, heat the olive oil and sauté the garlic and onions for 3-5 minutes or until the onions are translucent. Remove from flame and let it cool.

In a large bowl, combine the ground beef, eggs, bread crumbs, ketchup, sautéed onions and garlic, Italian seasoning, oregano, basil and mozzarella. Season it with salt and pepper. Mix well.

Place the meat mixture in a 9×5 inch loaf pan. Pack well. Cover loosely with foil. Bake it for 45 minutes to 1 hour or until the internal temperature reaches 160 F or until the meatloaf is set and the outside is brown. You can also pierce the meatloaf with a toothpick and when it comes out clean it is ready.

Heat the tomato sauce and diced tomatoes in the same skillet where you sautéed the garlic and onions. Season it with salt and pepper.

Transfer the meatloaf to a serving platter and pour the tomato sauce on it. Slice and serve with salad or vegetables.

After the meal enjoy a nice cup of Green Mountain Coffee.

Italian Meatloaf

Slightly different to the traditional Meatloaf, this dish is a more mature and grown up version – spicier with stronger flavours in it, it’s a great adult alternative to a boring meal time!

Meatloaf and Vegetables

To serve 8
Vegetable Oil
125g Chorizo, finely diced
175g Red Onion, peeled and finely diced
450g Lean Minced Beef
2 Garlic Cloves, peeled and crushed
5tbsp Chopped Fresh Parsley
150g Fresh White Breadcrumbs
2 Eggs
1 Egg Yolk
150ml Passata
Salt and Pepper
75g Cheddar, grated
50g Soft Blue Cheese, crumbled (i.e., Roquefort)
150ml Single Cream
125g White Bread, crusts removed and diced

1. On a piece of foil, mark a rectangle about forty three by thirty five centimetres, and brush with oil.
2. In a large bowl, mix the Sausage, Onion, Garlic and Minced Beef. Slowly add in the Parsley, most of the Breadcrumbs, the Whole Eggs, Passata and the Salt and Pepper. Knead well until the mixture is smooth, and then spread over the foil, leaving a border one inch from the sides.
3. Mix the Cheddar and Soft Blue cheese together, then set aside twenty five grams of the Cheese to one side. Add the rest of the Breadcrumbs to the twenty five grams of Cheese, along with more of the Parsley.
4. Bring the Single Cream to the boil, and pour over the Diced White Bread. Add the Cheddar and Soft Blue cheese mixture, and beat in the Egg Yolk until well mixed. Pour and spread evenly over the Meat, then roll up from the shorter side, using the foil as help. Place seam-side down on a lightly Oiled baking tray, then remove the foil.
5. Place in an oven at 180c for around an hour. Sprinkle the rest of the Cheese and Crumb mixture over the top, and return to the Oven for a further fifteen minutes until well browned.
6. Allow to sit for five minutes before cutting into thick slices, then serve straight away.
