Eyeball Caprese

Halloween is coming up, so here is a simple and delicious recipe that you can serve to family and friends. It is derived from the Italian insalata caprese, which is made of olives, mozzarella, tomatoes and basil. Ingredients:

Castelvetrano olives or any bright green olives

Black olives

Small balls of fresh mozzarella

Standard drinking straw

Plum tomatoes

Fresh basil leaves

Olive oil

Salt & pepper

 

Slice the ends of the green olives thinly. You will have a disk like shaped piece. Next, use the drinking straw to cut a hole at the center by pushing it down on the olive disk with a light twisting motion. Remove the cut portion using a toothpick.

With the same straw, create a hole in the black olive. Remove the piece and place it on the hole of your green olive. It should fit perfectly. Do this for the remaining olives.

Place the olive irises on the small mozzarella balls. Make sure that two mozzarella balls will fit on top of a tomato slice.

Assemble the caprese by placing a basil leaf and then top it with a tomato slice. Put the mozzarella eyeballs over the tomato. Drizzle it with olive oil and season it with salt and pepper. Serve chilled.

Scotch Eggs

Scotch eggs as the name suggests did not actually originate from Scotland. In 1738, a department store in London, Fortnum & Mason claimed to have created a new snack inspired by the Middle East’s Kofta. Scotch eggs consist of hard boiled eggs wrapped with batter made out of sausage meat. Here is a cheaper alternative that eliminates the use of sausage; using the all-time favorite bacon, you can create a whole new Scotch egg experience.

 

Ingredients:

2 tablespoons of butter

2/3 cup of all-purpose flour

1 cup of milk

4 eggs, hard boiled then chopped

1/2 cup chopped bacon

Salt and pepper to taste

1 egg, beaten

1/3 cup breadcrumbs

Oil for frying

 

In a saucepan, melt butter then add flour. Cook for a minute then gradually pour in the milk. Allow to cook until the mixture thickens. Add chopped eggs and bacon. Season it with salt and pepper to taste. Let it cool. Form into 8 oval shaped nuggets.

Using an egg slicer, divide each hard-boiled egg into two. Insert the slices of hard-boiled eggs into the nuggets.

Dredge nuggets in flour, dip into beaten egg and roll in breadcrumbs.

Heat the oil in a deep fryer or frying pan. Fry the scotch eggs until golden brown. Drain the excess oil by placing the eggs in a colander or using paper towels. Serve immediately with catsup or sauce of choice.

Banana Split Party

Banana Split

My birthday is coming up in a few days, and one of the things we considered to celebrate (and I always celebrate with my extended family) was throwing a Banana Split Party. Sounds fun, yes? Here’s how to do one of your own:

Planning a Banana Split Party

Your theme is Banana Split. This means that you should stick to colors reminiscent of a banana split when planning your decor and invitations. Bright yellow for bananas, bright red for cherries, chocolate brown, strawberry pink… you get the picture.

Create a Banana Split Station. This should be at the heart of your party. You’ll need:

  • Bananas. Lots! Keep them unpeeled so they don’t turn brown and yucky before guests arrive.
  • Ice cream. Classic flavors are Vanilla, Chocolate and Strawberry- but it’s really up to you. Get Banana-flavored ice cream if you really love bananas.
  • Syrups. Chocolate syrup, of course! Some Strawberry syrup, Caramel syrup or Butterscotch topping is nice.
  • Toppings. The funnest- and prettiest- part of your Station has to be your available toppings. Sprinkles, Mini M&Ms, Skittles, Reese’s Pieces, Chocolate Vermicelli, Cinnamon Sugar… your options here are endless!
  • Whipped Cream and Maraschino Cherries are classics, and will make any Banana Split look inviting. Whipped Cream in a can will do, and fresh cherries are of course better!

Most importantly, have fun! A Banana Split Party is supposed to get messy… it’s part of the fun!
