Bubble Tea

Bubble tea is a refreshing and healthy drink that everyone can enjoy. It comes in different flavors, but nothing beats this simple recipe that uses tea. Enjoy!

 

Ingredients:

2 English breakfast tea bags

2 tablespoons caster sugar

1 cup boiling water

1/4 cup tapioca

1 cup milk

1 cup ice cubes

 

Soak the teabags in a heatproof pitcher or jug. Add the sugar and mix well until it is dissolved. Let it stand for 5-10 minutes to let the flavor infuse. After, remove the tea bags and place the pitcher in the refrigerator for 30 minutes to 1 hour.

Pour 1.5 liters of water in a heavy pot over high heat. Bring it to a boil. Reduce the heat the medium Add the tapioca. Cook it for 30-45 minutes or until the tapioca is tender and transparent. Stir occasionally. Drain and rinse the tapioca with cold running water. Transfer to a large pitcher or jug.

Combine the tea and tapioca in a large pitcher. Stir well.

Pour into individual glasses with ice. Serve immediately.

Refreshing Egyptian Drinks

As we all know, it is very hot in Egypt. This is why they have various coolers to refresh you during the day. Here are some simple recipes for you to try.

Raspberry Mint Cairo Cooler

It’s just like a virgin Mojito. You can add white rum to give it an extra kick.

1    cup fresh mint

2 1/2   cups pineapple juice

1     cup raspberries

1 cup fresh, strained lime juice

1-1/2 cups granulated sugar

1-1/2 cups water

16   ounces cold lemon-lime soda

Lime wedges for garnish

Prepare the limeade ahead of time. In a medium saucepan under medium low heat, combine the water and sugar. Heat until the sugar melts. Stir occasionally. Let it cool and freeze it into ice cubes. Freeze the raspberries as well.

Combine all the ingredients in a glass or pitcher. Add the mint. Garnish the glass or pitcher with a lime wedge.

Karkady –Hibiscus Tea

Is an unusual but popular drink in Egypt. It is made of dried hibiscus petals. The best hibiscus comes from Upper Egypt, so don’t forget to bring home some if you go there.

1 cup hibiscus petals

2 cups sugar

Remove the stems or leaves from the dried petals. Soak it in cold water for 1-2 hours; you may refrigerate it if desired. Transfer it to a pot of water and let it boil. Remove from the pot and use filter paper to strain the liquid from the flower petals. After, place the petals in cold water for another 1-2 hours and then boil in water. Repeat the process until the petals lose its reddish color. Add the sugar and stir until the sugar granules dissolve. Serve warm or ice cold.

Fruit Lassi

This is my personal favorite, but I prefer the plain (yogurt flavored) or the cucumber yogurt lassi. Use any fruit you wish.

2     cups whole milk yogurt

1     cup ice water

1     cup cold milk

1/2   teaspoon ground cardamom

1      tablespoon rose water

2       mangoes, peeled and cut into cubes or 5 ripe bananas, sliced

Freeze the fruits or substitute water with crushed ice. Combine all the ingredients in a blender and blend until smooth.

Pour into individual glasses and garnish with fruit or sliced almonds if desired.
