Tequila Grilled Chicken Wings

Tequila grilled chicken wings are oh-so good appetizers which goes great with cocktails or beer. Share it with friends or serve it during outdoor barbecues. Enjoy!

 

Serves 5

Ingredients:

1 lb. chicken wings

1 teaspoon ground cumin

1/4 cup lime juice

5 tablespoons tequila

2 tablespoons chopped cilantro

2 pieces fresh red chili, seeded and sliced

1 teaspoon soy sauce

Salt and cracked black pepper to taste

Lemon wedges for serving

 

To prepare the tequila marinade, combine the cumin, lime juice, tequila, chopped cilantro, chili and soy sauce in a large bowl. Season it with salt and pepper. Mix well.  Place the chicken wings in the bowl and cover it. Let it marinate for at least two hours in the refrigerator. Lightly grease the grill rack and then grill the chicken wings for three to five minutes per side or until it is cooked and browned, but still tender. Baste it with the marinade as needed, so that it will not dry up. Place them on a serving platter or split them among individual plates. Serve immediately with lemon wedges.

Tequila Lime Burgers

Burgers are one of the most craved for comfort food. Most if not all though have their preferences when it comes to this all-time favorite snack. Here is a must try variation of the classic beef burgers everyone adores.

 

Serves 8

Ingredients:

2 pounds ground beef

3 tablespoon fresh basil, chopped

1/4 cup steak sauce

1/4 cup Worcestershire sauce

2 tablespoons Montreal steak seasoning

2 tablespoons tequila

2 tablespoons fresh lime juice

1 teaspoon lime zest

 

Preheat the grill and lightly grease it with oil to prevent the meat from sticking.

Combine the ground beef, basil, steak sauce, Worcestershire sauce, Montreal seasoning, tequila, lime juice, and lime zest in a large bowl. Stir until fully mixed. Form 8 patties from the mixture.

Cook patties on preheated grill to desired doneness. For medium well, cook the both sides of the patties for about 5 to 7 minutes depending on the heat. For well done, cook each side for 7 to 10 minutes.  Place the burger patties into buns and put desired dressing and vegetables.

Tequila Chicken Wings

Enough to serve 8, these wings will tingle just enough to get the ‘Oooh’ factor. The crispy golden brown skin, mixed with all the aromas given off will make these wings disappear faster than a Chicken crossing the road!

If there’s youngsters around, make a batch with either no Tequila, or just a few teaspoons to get the flavour, and only just 1/2 a Chilli.

Serves 8
Rind and Juice of 4 limes
3 tbsp Sugar
2 red Chillies (deseeded or not, it’s up to you!)
2 garlic cloves
1 tsp salt
75ml Tequila
1 tbsp runny honey
1 tbsp vegetable oil
1.5kg chicken wings

1. Mix the lime juice and rinds, sugar, chillies, garlic and salt together, and blend well (or use a pestle and mortar if you have one)
2. When quite fine, add the tequila and honey, and mix well.
3. Add the oil – it’ll stop the paste from burning
4. Massage into the chicken wings, and leave to marinade for as long as possible – overnight is great!
5. Heat the oven to 180 C/ 350 F/ Gas Mark 4, and cook the wings for 20minutes
