Watermelons are delicious fruits that contain vitamin C and beta carotene. This fruit contains a lot of water that is why it is refreshing when chilled or taken as a fruit shake. The rind is normally discarded, but in China it is eaten pickled, stewed and stir-fried.
500g watermelon, peeled and sliced
1/2 cup pineapple juice
1/2 cup white rum
1/4 cup triple sec liqueur
1 teaspoon grenadine
Combine the watermelon, pineapple juice, rum, triple sec, grenadine and crushed ice in a blender. Blend it for 2-3 minutes or until it is smooth. Add more grenadine if desired.
Pour the watermelon mai tai into individual glasses and garnish them with sliced watermelon. Serve immediately.
