Weight Watchers Fabulous Spicy Corn Muffins Recipe

spicycornmuffins.jpgSkip the cornbread and pair up with these jalapeno and scallion-filled muffins with a bowl of your favorite chili- you might have a new favorite here soon!

Points value:  3 ; Servings:  12

Ingredients:

  • Cooking spray
  • 1 cup yellow cornmeal
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup corn oil
  • 3 tablespoons honey
  • 1 large egg, beaten
  • 1 cup skim milk
  • 3/4 cup scallions, chopped
  • 1 medium jalapeno pepper, seeded & finely chopped

What’s Next:

Go ahead and preheat your oven to 350 F, or 175 C.  Coat a 12-hole muffin tin or muffin liners with cooking spray.

In a large bowl- mix together cornmeal, flour, baking powder & salt.

In a medium bowl- mix together oil, honey, egg & milk.

Create a well with a spoon in the middle of the cornmeal mix and pour in milk mixture,  Mix until combined.

Fold in scallions & jalapenos.

Drop heaping tablespoon of batter into muffin pan until each is about 2/3 full.  Bake 20 -25 minutes, or until golden.  Enjoy these fabulous Weight Watcher muffins.  Watch out for Your New Favorite Weight Watcher Chili Recipe.
