- Cooking spray
- 1 cup yellow cornmeal
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup corn oil
- 3 tablespoons honey
- 1 large egg, beaten
- 1 cup skim milk
- 3/4 cup scallions, chopped
- 1 medium jalapeno pepper, seeded & finely chopped
Go ahead and preheat your oven to 350 F, or 175 C.Â Coat a 12-hole muffin tin or muffin liners with cooking spray.
In a large bowl-Â mix togetherÂ cornmeal, flour, baking powder & salt.
In a medium bowl- mix together oil, honey, egg & milk.
Create a well with a spoon in the middle of the cornmeal mix and pour in milk mixture,Â Mix until combined.
Fold in scallions & jalapenos.
