This is a fantastic, moist cake with a lot of sweet flavor, and the sweetest part is that it’s Weight Watchers so you know you’re doing right. Enjoy!
Ingredients:
- 1 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1 egg
- 1 teaspoon vanilla
- 1/4 cup butter, melted
- 1/4 cup white sugar
- 1 cup zucchini, unpeeled & shredded
- 2 sweet apples, peeled and shredded
- 1/4 cup raisins
What’s Next:
Go ahead & preheat oven to 350 F or 175 C.
In a large bowl- combine flour, baking soda & nutmeg
In a small separate bowl- combine egg, vanilla, butter & sugar. Whisk until blended. Stir in zucchini, apples and raisins. Add contents to dry mix & stir well.
Pour in a greased 8-inch round pan. Bake 35 minutes.
