- 1 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1 egg
- 1 teaspoon vanilla
- 1/4Â cup butter, melted
- 1/4Â cup white sugar
- 1Â cup zucchini, unpeeled & shredded
- 2 sweet apples, peeled and shredded
- 1/4 cup raisins
Go ahead & preheat oven to 350 F or 175 C.
In a large bowl- combine flour, baking sodaÂ & nutmeg
In a small separate bowl- combine egg, vanilla, butter & sugar.Â Whisk until blended.Â Stir in zucchini, apples and raisins.Â Add contents to dry mix & stir well.
Pour in a greased 8-inch round pan. Bake 35 minutes.
