To serve 4
750g New Potatoes
1 tbsp Olive Oil
1 Red Chilli (deseeded and finely chopped)
Black Pepper (to taste)
1. Cook the New Potatoes
2. Heat the Olive Oil in a pan, and add the Chilli, fry for a couple of minutes on a low heat
3. Add the Spinach, and stir in until wilted
4. Drain and lightly crush the Potatoes, then mix in the Spinach and Chilli.
5. Season to taste with Pepper, then serve.
