Marmalade chicken is best eaten with steamed rice or as an appetizer. They are delicious sweet and salty bite sized chicken pieces with an orange zing. You may add some chili for more spice if desired. It is a healthy dish that is perfect for parties or intimate dinners.
1 cup reduced-sodium chicken broth
2 tablespoons red-wine vinegar
2 tablespoons orange marmalade
1 teaspoon Dijon mustard
1 teaspoon cornstarch
1 pound chicken tenders, cubed
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
6 teaspoons extra-virgin olive oil, divided
2 large shallots, minced
1 teaspoon freshly grated orange zest
Place the broth, vinegar, marmalade, mustard and cornstarch in a medium sized bowl. Mix well.
Season the chicken with salt and pepper. After, heat 4 teaspoons of oil in a large skillet over medium heat. Â Fry the chicken for 3-6 minutes or until they are light brown. Transfer it to a plate and keep warm.
Heat the remaining 2 teaspoons of oil in the skillet. SautÃ© the shallots until they turn golden brown. Â Add the broth mixture into the pan. Let it simmer for 10-15 minutes until the sauce thickens. Stir occasionally and scrape the browned bits at the bottom. Add the chicken and simmer for another 3 minutes. Stir in the orange zest. Transfer the chicken to a serving plate and serve immediately.
