Fruit Kebabs with Passion Fruit Yogurt

Fruit kebabs make delicious desserts and snacks. It is something people of all ages appreciate and enjoy. The yummy passion fruit yogurt enhances the fruity tastes making you crave for more. It reminds me of my recent trip to Vietnam where we often sipped passion fruit shake by the pool in Mui Ne Hills.

 

Serves 4-6

Ingredients:

2 cups strawberries

1/2 a honeydew melon

1/2 a melon

2 bananas

For the passion fruit yogurt:

1/2 cup plain yogurt

2 tablespoons fresh passion fruit pulp

2 teaspoons honey

1/4 teaspoon cinnamon powder

 

First prepare the passion fruit yogurt, combine the pulp, yogurt, honey and cinnamon in a small mixing bowl. Cover and refrigerate until needed.

Remove the hulls from the strawberries. Next, cut the honeydew and the melon into 1/2 inch cubes. After, peel and slice the bananas. Thread the fruits on skewers. Serve with passion fruit yogurt. You may serve the kebabs chilled or at room temperature.

*If passion is not available, plain yogurt and honey will suffice.

Peach and Passion Fruit Chantilly

Living in a tropical country has made me appreciate fruits. We have a lot of them that are in season all year round and a few that are seasonal. It is unfortunate that we don’t grow peaches and passion fruits locally, but I had a chance try this delectable dessert in one of my travels. It is easy to make and definitely delicious.

I think canned peaches will do fine as well if fresh ones are not available. In fact its sugary syrup will go well with this fruity dessert. A tablespoon or two of it will do. You can even add orange segments to give the dish more texture.

This delightful recipe makes use of orange flower water which is often used in Middle Eastern cuisine. It is meant to flavor traditional sweets or drinking water to improve the taste. Nowadays, it is used in French, Greek and American cuisines as well. Madeleines, scones, marshmallows and cocktails are a few examples of food and drinks that use this exotic blend.

Orange flower water is used sparingly because you wouldn’t want to feel like you are eating perfume. A few drops usually suffice. Some brands may be strong, while others are sweeter and milder.  It is best to adjust the amount according to your taste. It can be bought in supermarkets as there are Middle Eastern, American and European brands that make it. If it is not available, you can substitute it with orange oil or orange flavored liqueur like triple sec.

 

Ingredients:

3 passion fruits

6 peaches, skinned, halved and stones removed

125 ml whipped cream

2 tablespoon orange flower water

 

Cut the passion fruit in half using a sharp knife and then spoon the flesh into a medium sized bowl. After, slice the peaches into thin strips and then add it to the passion fruit. Gently toss the fruits together and then place them in individual serving bowls or glasses. Refrigerate.

In a small bowl, combine the whipped cream and orange flower water. Whip it until it forms soft peaks. Get the glasses with passion fruit and peaches. Top them with the orange flower cream and serve chilled.

Banana Bread with Passion Fruit Butter

Banana bread is a delicious snack or dessert. I usually like the ones with nuts, until I found an interesting alternative. Passion fruit butter is a creamy spread that melts in your mouth. This recipe is perfect for tropical countries because you have access to a wide array of sweet bananas and of course delicious passion fruit.

 

Serves 6

Ingredients:

1 2/3 cups plain flour, sifted

1 1/2 teaspoons baking powder

1/3 cup caster sugar

1/3 firmly packed cup brown sugar

2 eggs, beaten

1 teaspoons vanilla extract

3 ripe bananas, mashed

For the passion fruit butter:

50g cream cheese

175g butter, salted

1/4 cup icing sugar, sifted

1/4 cup fresh passion fruit pulp

 

Preheat the oven at 160C and then grease a 10x20cm baking pan with melted butter.

Combine the baking powder, flour, sugar, eggs, vanilla extract and bananas in a bowl. Mix well and then place it into the greased pan. Bake the bread for 30-40 minutes. Insert a toothpick into the bread to test doneness. It must come out clean. Let it cool for 5 minutes before removing it from the pan. Let it cool completely.

Place the cream cheese, butter, sugar and passion fruit pulp in a food processor or blender. Process it until smooth. Transfer it to a sealed container and refrigerate until set. Slice the bread and serve it with the passion fruit butter.
